Healthy Eating: Oats Sprouts and Vegetable Uttapam

Oats Sprouts and Vegetable UttapamDo you love your traditional uttapam? Well, you’re about to love this healthy twist we’ve added to it more! Quick, easy to prepare and nutritious, the Oats Sprouts and Vegetable Uttapam is a mouthwatering recipe just as it is healthy. As it is made with oats, it provides better satiety too!

Ingredients:

  • Rolled oats – 1 cup
  • Curd – 1 cup
  • Ginger chili paste – 1 tbsp
  • Parboiled sprouts – ½ cup
  • Grated carrot – ½ cup
  • Grated beetroot – ½ cup
  • Finely chopped onion – ½ cup
  • Finely chopped tomatoes – ½ cup
  • Finely chopped coriander – ½ cup
  • Salt
  • Turmeric – 1 tsp
  • Red chilli powder – 1 tsp
  • Lemon juice – 1 tsp
  • Salt as per taste
  • Oil – 1 tbsp

Method:

  1. Heat a pan and roast the oats for 3-5 minutes and grind them into powder.
  2. In a mixing bowl, add oats powder, curd, salt & ginger chilli paste. Mix this well & add some water to make dosa batter consistency. Put it to rest for 20 minutes.
  3. For the topping, in a different bowl add parboiled sprouts, onion, tomato, carrot, beetroot, coriander and lemon juice. Add the spices too and give it a gentle mix.
  4. The oats batter will be thick after 20 minutes, so add some water again to gain dosa batter consistency.
  5. Heat a dosa pan and grease with some oil. Take a spoon full of oats batter & spread it to make a mini uttapam. After it is slightly cooked take a spoon full of sprouts & veggies stuffing to put over the uttapam. Cover the pan with a lid & allow it to cook.
  6. After it turns golden brown on the base, flip it over for the stuffing to cook well too.
  7. Time to serve it hot with coconut chutney.

Healthy Eating: Paneer Stuffed Palak Paratha

Paneer Stuffed Palak ParathaWant to try a recipe that’s balanced, nutritious, quick and easy to make? We’ve got you covered with this awesome Paneer Stuffed Palak Paratha recipe which is guaranteed to be the best meal of your day!

What You Will Need 

  • Blanched Spinach puree: ½ cup
  • Whole wheat flour: 1 cup
  • Paneer (scrambled): 1 cup
  • Carrot (shredded): ½ cup
  • Ginger chilli paste: 1 tsp
  • Salt as per taste
  • Turmeric powder: ½ tsp
  • Red chilli powder: 1 tsp
  • Jeera powder: 1 tsp
  • White sesame seeds: 1 tsp
  • Oil: 1 tbsp

Method:

  1. In a mixing bowl, add paneer, carrot, ginger chilli paste, salt & mix it well. Keep this stuffing aside.
  2. For making dough, in a bowl, add whole wheat flour, palak puree, salt, jeera powder, haldi, red chilli powder & white sesame seeds. Mix them well & make a soft dough.
  3. Now start rolling the rotis, dust some powder and make medium thick roti. Put the paneer stuffing, pack the rotis well & start rolling again.
  4. Heat a pan and start cooking the parathas. Grease the pan with some oil, once golden brown on a side, flip it over & cook again.
  5. Your Paneer Stuffed Palak Paratha is ready! Serve it hot with curd.

Healthy Eating: Immunity Boosting Ladoos

Are you craving for ladoos but do not want to buy them because of the pandemic? The question is – why control this craving? Don’t worry. We’ll help you out with an awesome, tasty and delicious immunity boosting ladoos recipe that will rev up your immunity and help you enjoy this treat guilt-free! 

Preparing The Immunity Powder (1 tbsp = 15gm) 

  • Organic turmeric powder – 7 tbsp 
  • Cumin seeds – 4 tbsp 
  • Coriander seeds – 4 tbsp 
  • Fennel Seeds – 7 tbsp 
  • Whole black pepper – 2 tbsp 
  • Cardamom – 3 tbsp 
  • Dry ginger powder – 2 tbsp 
  • Cinnamon powder (dalchini) – ½ tbsp or 1 stick

Method: Lightly roast all the ingredients (except turmeric powder and dry ginger powder) on a slow flame till you get a nice aroma. Once cooled, transfer them in a grinder and grind them to a powder. Add turmeric and dry ginger powder to it and mix with a dry spoon. Store in a clean, airtight glass or steel jar for 4-6 months.

How To Make The Immunity Boosting Ladoos 

Ingredients (1 cup = 200gm) 

  • Sattu powder – 1 cup 
  • Ghee – ¼ cup or 3 tbsp 
  • Immunity powder – 2 tbsp 
  • Grated jaggery – ½ cup 

Method: 

  1. Heat 1 tbsp ghee in a pan. 
  2. Add 1 cup sattu powder. Mix it and roast it for only 2-4 min on low flame. Shift in a bowl.
  3. Add ½ cup grated jaggery.
  4. Add 2 tbsp. Immunity powder and mix it very well.
  5. Then, add 2 tbsp. ghee (room temperature). Mix it  well.
  6. Shape into ladoos while the mixture is still warm.
  7. Store these immunity ladoos in an airtight steel or glass jar for a week.
  8. Enjoy 1 immunity boosting ladoo daily as a mid-morning snack/ post workout meal/ early morning on empty stomach for energy as well.

Tips while making the Ladoos

  • If you do not have sattu powder then grind roasted chana dal to a fine powder, sieve it and use it.
  • You can also use jaggery powder. If there are granules in jaggery powder, grind it in the mixer grinder to make fine powder.
  • If you are not able to bind ladoos, add a few tsp. ghee as required.
  • If you are allergic to sattu/chana dal flour you can have ½ tsp immunity powder with 1 glass warm water in early morning or with 1tbsp ghee or can be used as garam masala in gravy.

Health Benefits of the Immunity Boosting Ladoos  

  • Sattu is known as the “Poor man’s protein” and is loaded with protein, calcium, fiber, iron and magnesium. It helps in building strength and muscle mass rapidly. 
  • It is excellent for bone health to prevent osteoporosis, cleans out the colon and stomach. Is an excellent cure for constipation and aids fat loss. 
  • It has cooling effects on the body.
  • Ghee is full of fat soluble vitamins, helps to  build strong bones. 
  • Jaggery is loaded with antioxidants, minerals and vitamins. It boosts immunity and guards the body against harmful pathogens.
  • Turmeric aids in the healing of osteoarthritis, CVD, diabetes, asthma, allergies, skin diseases, Alzheimer’s, Parkinson’s and cancer diseases. 
  • Cinnamon helps to improve glucose and lipid levels. 
  • Cardamom, cumin seeds, fennel seeds and coriander seeds are rich in antioxidants and help in relieving digestive issues like bloating and indigestion. Piperine in black pepper can increase absorption of nutrients like selenium, B- complex vitamins, Beta carotene and rich in potassium, manganese and iron. 
  • Dry ginger powder contains thermogenic agents that help burn fat and reduce cholesterol and triglycerides.

Healthy Eating: Corn Tikkis

We can all agree that there is something almost nostalgic about breathing in the fresh aroma of corn during the monsoons! Whether boiled or roasted roasted on the cob, relishing the sweet taste of corn is quite the treat in this season. Now that you’re indoors, let’s relish this monsoon treat by putting a healthy twist on corn and prepare some tasty and nutritious Corn Tikkis that you can enjoy.

What You Will Need: 

  • Boiled and Grinded Corn Kernels – 1 Cup
  • Finely Chopped Capsicum, Onion, Carrot, Coriander – 2 tbsp each
  • Boiled Corn Kernels – 2 tbsp
  • Boiled Potatoes – ½ cup
  • Ginger Paste – 1 tbsp
  • Green Chilli Paste – 1 tbsp
  • Red Chilli Powder, Coriander + Cumin Seeds Powder – 1 tsp each
  • Garam Masala – ½ tsp
  • Salt and Chaat Masala – As per taste
  • Wheat Rusk Powder – 2 tbsp
  • Oil For Roasting

Method:

  1. Take a pan, heat 1 tsp of oil and add the ginger paste to it. Saute lightly and add grinded boiled corn and saute for 4-5 min on medium flame until the moisture flies away.
  2. In a big bowl, add mashed potatoes, all chopped vegetables, corn and grinded corn too along with all spices with salt and chat masala.
  3. Using your palms, mould the mixture into flat tikkis (cutlets).
  4. Spread wheat rusk powder on a plate and roll the tikkis in it.
  5. Heat a non-stick pan and brush some oil over it.
  6. Place the tikkis on the pan and roast for 4-5 min on medium flame until golden brown and then flip them over and cook for 4-5 mins on the other side as well
  7. Serve hot along with green chutney or chilly sauce.

Highlights of the Corn Tikkis:

  • Not a very quick recipe but will satisfy your taste buds just as similar to having a crispy pakoda.
  • The recipe will give us so many colourful vegetables which are all good for our system.
  • Corn is extremely good for your eyes with the phytochemicals & vitamins it provides
  • The insoluble fiber in this recipe aids digestion and promotes gut health.
