Know about your gut health- PART 2!

In my previous blog, I talked about healthy and unhealthy microbes, in the present blog I am going to tell you about all the different aspects that can impact our gut in a better way!

Let’s talk about different probiotic sources!

       (1) Yoghurt

  • Yoghurt is a very good source of lactobacillus (The healthy microbe which we discussed in the previous article)
  • Fermented from milk by adding probiotic bacteria

      (2) Cheese

          Well, processed cheese has no good bacteria but different cheese types like gouda, mozzarella, cheddar and cottage cheese are very rich in healthy gut microbes.

       (3) Miso

  • Fermented foods are very rich in healthy gut microbes!
  • Miso is a sauce which is made out of fermented soya beans and barley/rice malt

    (4) Sauerkraut

         This is finely cut cabbage which is fermented by lactic acid bacteria

(5) Kefir

  • It is a milk drink which is fermented using lactic acid bacteria and yeasts.

(6) Kimchi

  • It is a Korean dish which is made out of fermented cabbage, radish, spring onion and cucumber.

       (7) Apple cider vinegar

  • Easily available fermented food
  • Always prefer apple cider vinegar with mother culture.

         Let’s talk about prebiotic sources!

Prebiotic is a special plant fibre which human body can’t digest but this encourages the growth of good bacteria in your gut. So in short prebiotics are “Good Food “for probiotics. Good gut bacteria will turn that plant fibre into butyrate. This chemical butyrate works as an anti-inflammatory in the bowel. In short, they are fertilizers to cultivate good gut bacteria!

   Sources of prebiotics:

      (1)  Foods rich in inulin

      * Onions and garlic

  • Chicory
  • Dandelion
  • Bananas
  • Asparagus

  (2) Foods rich in resistant starch

  • Unripe bananas
  • Green peas
  • Potatoes
  • Cashew nuts
  • Rolled oats

Which probiotics work for which issue?

Bifidobacteria and Lactobacillus are 2 most common strains which are found in fermented foods like yoghurt, kefir and cheese.

These 2 common strains have different species which works on different issues.

Strain: Bifidobacteria and Lactobacillus

 Constipation : Bifidobacterium longum

    *    Available in fermented foods or in the form of a capsule

  • Helps in increasing the bowel movements in adults

(2) Irritable bowel syndrome (IBS):

Combination of Bifidobacterium + Streptococcus + Lactobacillus

  • Bloating is the most common issue in people suffering from IBS and this probiotic combination helps in reduces bloating

 (3) Lung infection:  Combination of Lactobacillus acidophilus + Bifidobacterium

 *       Combination of these probiotics helps in reducing symptoms of infection like fever, cough, running nose

(4) Diarrhoea: Combination of Bifidobacterium + Lactobacillus acidophilus/ bulgaricus

  • Combination of these probiotics helps in reducing diarrhoea frequency.

What to look for a product when you are buying a probiotic?

     *    High colony forming units (CFU) Count

*    Your microbiome contains about 40 trillion microbes so you need a probiotic which has lots of healthy microbes’ in short high CFU counts.

  • Always look for a product which has at least 20 billion CFU and more.
  • Probiotics available in the markets are not even close to this number but fermented foods will cross the number for sure!

(2) Multiple Strains

  • You need different strains in your gut for good health so you should find a probiotic which has multiple strain.
  • The best thing about fermented foods is vast diversity!
  • When you purchase the probiotic supplement from outside make sure it has 6 different strains in it.
  • Make sure you take care of the substrains in the supplement. Lactobacillus acidophilus is not same as a Lactobacillus casei so if the supplement just mentions lactobacillus then the product might not be that effective.

Gut-friendly Recipes :

  1. Pumpkin porridge

 Ingredients:

     *  300 g of pumpkin (Make sure it is diced and cooked)

  • 50 g of extra virgin coconut oil
  • 225 ml of pure milk
  • 1 tsp of vanilla extract
  • Pinch of rock salt or himalHimalayan salt
  • ½ tsp of cinnamon (dalchini) powder
  • A handful of pomegranate/watermelon seeds

 Method:

  • Blend all the ingredients except the seeds.
  • Make a smooth paste
  • Warm the mixture in cast iron pan.
  • If you want to make it thin then you can add milk
  • Serve it warm with seeds!

 (2) Cashew and banana pot

 Ingredients :

  • 250 grams of unsalted cashews
  • 1 medium banana
  • 200 ml of milk (Depends on your preference)
  • ½ tsp of cinnamon powder (dalchini)
  • 2 tsp of peanut/almond butter
  • 1 tsp of vanilla extract

Method :

  • Take a bowl and soak cashews for 6 hours (prefer overnight)
  • Drain the water and then blend it with all other ingredients
  • Make a smooth paste
  • Refrigerate it for 15 mins
  • Serve it with some diced bananas

(3) Green gut-friendly smoothie

Ingredients :

  • 1 cup of spinach leaves
  • 250 ml of water
  • ½ avocado (optional)
  • 1 banana
  • 1 tbsp of tahini paste
  • 1 tsp of ginger powder
  • 1 tsp of lemon juice

Method:

  • Blend all the ingredients together.
  • Serve chilled.
  • Top it with seeds as an additional topping.

(4) Turmeric latte

Ingredients :

  • ½ tsp of ginger powder
  • 1 tsp of turmeric powder
  • 300 ml of milk (prefer according to your choice)
  • 2 cardamom pods (elaichi)
  • 1 tsp of manuka honey
  • 2 tsp of extra virgin coconut oil
  • 1 pinch of cinnamon powder

Method:

  • Take a cast iron pan, add milk, cinnamon powder, cardamom pods and bring it to boil.
  • Add rest of the ingredients and boil it for 10 mins
  • Serve hot and sprinkle some cardamom powder.

(5) Rainbow hummus

 Ingredients :

  • 250 grams of chickpeas (Kabuli Chana)
  • 1 lemon juice
  • 1 tbsp of tahini paste
  • 1 tsp of salt
  • 1 garlic clove
  • 5 tbsp of olive oil

Method:

  • Blend all the ingredients in the food processor or with a hand blender till you make a creamy paste
  • Store it in the refrigerator.

(6) Tahini paste

 Ingredients:

  • 1 cup of sesame seeds
  • 4 tbsps of olive oil
  • Pinch of rock salt

Method :

  • In a cast iron pan, add sesame seeds and toast it till it becomes light brown
  • Sesame seeds can burn quickly so make sure you are extra careful about it
  • Add sesame seeds to the food processor with 4 tbsps of olive oil.
  • Blend it till it becomes smooth
  • Make sure tahini is smooth, if required you can add some olive oil.

 “If it doesn’t come out of the bowels, it will come out of your skin so make sure your gut is healthy”!

Beat the Heat with cool drinks

coconut-waterIts summer and the heat have already started to sap us out. The heat starts creeping in, finding its way to draw fluids from our body cells as we sweat while playing, travelling or even just sitting around in the sun. Keeping the body hydrated helps the heart pump blood easily through the blood vessels to the muscles. Hence, the muscles work efficiently.

Dehydration can be a serious condition that can lead to problems ranging from swollen feet, lack of concentration, lethargy, headache to heat stroke.

Let’s beat the heat by ensuring optimum hydration through adequate water intake throughout the day and grabbing some hydrators like:Lemon Water* Coconut water This has natural electrolytes to replenish lost minerals in perspiration

* Buttermilk­ it is a blend of curd with water and dash of Cumin powder, asafoetida, coriander leaves, rock salt, ginger all of which aid in improving digestion.

* Lemon water/Lemonade: Lemon a citrus fruit has a good amount of vitamin C, it turns our body alkaline.

* Jaljeera water:­ It a mixture of rock salt, cumin powder and is known to reduce indigestions.

* Soya milk ­Flavoured/plain soya milk as it provides a good amount of proteins apart from hydrating the body.

* Berry/seasonal fruit sorbet: Blending any berry like strawberries, blueberries, raspberries (which has a lot of antioxidants to increase immunity) with ice is good.

* Mint Mojito: ­blend of water + mint leaves and few drops of lemon for flavour. Mint leaves are extremely good body coolant.

* Green tea lemonade: a bunch of antioxidants and vitamin C from lemon to increase immunity.

* Peach ginger ice tea:­ Mash 6 canned peach halves with 1 and 1/2 cups of the juice, raw honey and 1 tablespoon grated ginger in a pitcher. This aids in good digestion.soya milk

* Peanut butter frappe­: A glass of cold milk blended with 2 tablespoons of peanut butter. In summer our food intake drops down drastically, apart from hydration this drink also provides a good amount of proteins and required fats.

* Honeydew ice: 1 cup each frozen honeydew melon and frozen diced cucumber with the juice of 1 lime and some raw honey.

* Any fruit or dry fruit milkshakes. (which will be a good substitute for evening snack)

* Subja (chia seeds) soaked overnight in water is a natural coolant, it can be had with milk

* Vegetable juice ( leafy vegetables/beets/cucumber) + citrus fruits + ginger + garlic + lemon

* Solkadi (a blend of coconut milk+kokum+ginger+corriander leaves) known for reducing acidity and is a body coolant.

* Kokum Sharbat: Kokum extract (after soaking in water) blended it with water, Cumin seed powder and rock salt. Kokum is again known for reducing acidity

* Aam (Mango) Pannah is raw mango drink mostly available in Maharashtra region of India. It has heat resistant properties. It is also rich in Vitamin B1, B2, niacin and vitamin C.

* Aloe Vera juice: This is ­natural coolant. It is available in the market in a concentrated form. It needs to be mixed with water. It has anti-­bacterial, anti­fungal properties too.

* Bottle guard + 1 cup of black basil ( mint optional) is an excellent cooling agent.

Beat the heat with these 6 healthy summertime Coolers

“It was so hot!! That I had a coke to cool down….

“I just can’t do without chilled juice in this heat “

Yes, we are in the middle of April and it’s getting hotter by the day. As the heat wave increases, we have this constant feeling of being completely sapped out of our energy. This feeling lingers through the day making us lethargic and lazy.

When the temperature soars and sweat pours, we are unable to satisfy ourselves with just chilled water, and want something more? The reason being increased sweating leads to dehydration. Sweating depletes the electrolytes in the body, and hence plain water does not quench our thirst and the body craves rehydration through soft drinks and juices.The downside, however, is that these drinks and juices come with loads of sugar and chemicals.

Having carbonated beverages or powder based refreshment doesn’t actually serve the cause of dehydration. These hardly contain any electrolytes and contain high amounts of sugar, which we need only in a small amount, as glucose does help in carrying the electrolytes into the blood.

Here is the solution!! I have tried to put together a few of my favourite healthy and refreshing drinks, to enjoy all through summer, these beverages are still high in sugars, but do not contain any white sugar, they are made instead with natural and unrefined sugars like jaggery, honey, and naturally sweet fruits.

  1.  Jaggery Lemonade

Let me start with my all-time favourite, jaggery juice or lemonade made with jaggery

Some will say it’s the same as adding sugar, But NO !! Although the glucose content in both may be similar, jaggery is loaded with antioxidants and minerals like zinc, iron, and selenium. Mixed with water it has a cooling effect on the body in the summers, and also aids in digestion.

Serves 4

25 gm jaggery, crushed

1-inch piece ginger, grated

1 lemon

Water

Soaked Basil seeds (optional)

Soak crushed jaggery, add grated ginger in 4 glasses water, for 2 – 3 hours (I usually keep it in the fridge while soaking, so that it soaks and chills at the same time). After 2 hours, mix and dissolve any lumps of jaggery that might be present. Squeeze juice of a lemon in it, strain the mixture, add soaked basil seeds to have a further cooling effect, and serve.

    2.  Aam Panna (Raw mango cooler)

Raw Mango is an extremely healthy fruit, a godsend for the summer that is high in Vitamin C, prevents dehydration, sunstroke, reduces body heat, relieves diarrhoea and constipation and activates the liver too.

A traditional recipe, one of my favourites, since summer also brings seasonal raw mangoes with it.

Serves 4 – 6

1 Raw mango

Mint leaves

10 – 15 g of black jaggery.

Water – to dilute.

Boil the raw mango in a pressure cooker for 2 whistles. Retain the liquid. Peel the raw mango and scoop out all the pulp, discard the seed, and blend the pulp in a mixer with jaggery and mint leaves, strain and mix with the remaining liquid. At this point, the raw mango concentrate can be frozen into cubes and used as per requirement, 2 cubes in a glass of water. Or diluted with chilled water and served immediately.

     3.  Iced Green Tea with Ginger, Mint, and Honey

We already know how healthy a cup of green tea is, but what if you are not in the mood for anything hot? Let’s just make iced tea with green tea!!

Serves 6 to 8

6 cups water
1/4th  cup ginger, peeled and sliced
3 to 6 bags green tea (depending on how strong you like your tea)
1/2 cup mint leaves, tightly packed, plus extra to serve
1/4th  cup honey
1 lemon, divided

In a medium-sized pot, combine the water and ginger slices. Bring to a boil. Once the water boils, remove from heat and add the tea bags and mint leaves. Cover the pot and steep for about 15 minutes.

Strain the brewed tea; separating the liquid from the mint leaves and tea bags. Mix in the honey and juice from the half lemon into the tea. Transfer to a pitcher and cool at room temperature before refrigerating.

Slice the second half of the lemon. When ready to serve, add 1 to 2 lemon slices into each glass, along with a few mint leaves and ice cubes. Once the tea has cooled, pour it into the glasses and serve.

     4. Muskmelon, Coconut and orange drink.

Coconut water is a very refreshing drink to beat the torching tropical summer thirst. Its liquid is packed with simple sugars, electrolytes, and minerals to replenish dehydration conditions inside the human body, combine it with a few fresh fruits and you have a designer tropical drink.

Serves 3 -4

2 cups or ½ a muskmelon, cubed

1 orange segmented

1 ½ cups coconut water (1 large tender coconut)

¼ tsp black salt

Mint leaves for garnishing.

Combine all the ingredients in a mixer, and blend until smooth, pour into glasses, and serve immediately garnished with mint leaves. We don’t strain this juice as we would like to have it with all the goodness of its fibres.

  5.   Kokum Juice.

Another gem to have in your kitchen in the summer, the benefits are endless and better explained here, but, most commercially available kokum syrups are loaded with sugar and preservatives, hence a fresh version would be more beneficial.

Serves 4 – 5

150 gms kokum
4 glasses of cold water
1 pinch salt
2 tsp black salt (pink salt)
1 tsp roasted cumin powder
15 – 20 g jaggery
½ tsp black pepper powder
mint leaves  for garnishing

Soak kokum and jaggery in ½ a glass of hot water for 5 minutes. Blend it with blender, drain & keep aside. Mix all ingredients together in 4 glass of cold water and garnish with fresh mint leaves.

     6.  Fruity lemon fizz

For all those fizz lovers, don’t worry I haven’t forgotten about you. And YES!!! Fizz can be made healthy too.

Serves 1 – 2

1 Tbsp any mashed fruit (strawberry/peach/kiwi/cucumber/pineapple/sweet melon/watermelon)
2 Tbsp whole sliced fruit
3/4 cup sparkling club soda/sparkling mineral water
¼ cup mineral water

1 Tbsp lemon juice/orange juice
1 lemon slice/orange slice

Mint leaves
honey or stevia if needed.

You will need a good amount of fruit per glass since this will be what flavours your water. Adding frozen fruit can be very helpful because as the frozen fruit melts into the water it easily saturates the water with flavour.  Frozen fruit also chills your beverage nicely. Another trick is to gently mash some of your fresh fruit to release the flavour.
Add your fruit, sweetener (if using), mint leaves, lemon juice and water to your serving glass. Stir/mash briskly and allow it to chill in the fridge until ready to serve, add chilled club soda to the glasses just before serving.

NOTE: I have tried to use natural sugars in my recipes, for diabetics, you can enjoy the same drinks with stevia instead of natural sugars if you are looking for optimum sugar control.

Overdoing anything, even if healthy will do no one good. Hence, the ideal serving size for these drinks would be 1 glass a day. Chilled to perfection!!

Healthy Dips and Sauces

We always want our main course that we eat to be healthy. Would you like some side dishes to make your meals more interesting? Have you ever thought of side dishes that you could have along with your main course which are equally healthy as your main dish and can be had as fillers in the mid meals?

There are many such alternatives available in the market which is not only full of preservatives but also loaded with sugar, fats and are way too costly.

This thought led me to write this blog on healthy dips and sauces which are not only easy to make but are pocket friendly. To add to the benefits – ‘No added preservatives’. All your family members especially children would love indulging into these dips and sauces with various food items. Don’t be shocked if you see your child’s plate clean after this.

Let us have a look at some of the yummy healthy dips and sauces which serve to be an excellent side dish

  1. Avocado Yoghurt Dip
Ingredients Amount
Low fat Greek Yoghurt/ hung curd ½ cup
Avocados (ripe) 2 no
Garlic Ginger (minced) 1 tsp
Fresh Coriander leaves 3-4 TBSP
Mint leaves Few sprigs
Bell pepper 1 no
Lime Juice of 1 no
Red chilli powder ¼ tsp
Salt To taste
Pepper powder To taste

METHOD:

  1. Mix all the above ingredients in a blender. Mix until smooth paste.
  2. Serve with vegetable sticks or whole grain chips.
  3. You can use it as a base for your sandwiches and rolls

BENEFITS

Rich in healthy fats,proteins, loaded with vitamins, minerals, good for digestive and gut health

  1. Mix fruit Salsa
Ingredients Amount
Pineapple (diced) ½ cup
Mango (ripe) (diced) ½ cup
Strawberries(diced) ½ cup
Fresh mint leaves 2-3 TBSP
Ginger ½ inch
Bell pepper 1 no
Lime (big) 1 no
Red chilli powder ¼ tsp
Salt To taste

METHOD:

  1. In a saucepan, mix pineapple, mango and strawberries, bellpepper, ginger, chopped fresh mint leaves, red chilli powder, lime juice and salt. Mix well until well blended.
  2. Enjoy this sweet, tangy, spicy salsa with pita chips/ wheat bread

BENEFITS

Super antioxidant rich. A blend of various vitamins, minerals and helps improve immunity

  1. Beans Basil Hummus
Ingredients Amount
Fresh kidney beans (cooked) 2 cup
Chick peas (soaked and drained) 2/3 cup
Garlic cloves 4-5 no
Ginger ½ inch piece
Fresh basil leaves/ tulsi leaves ½ cup
Mint leaves Few sprigs
Onion 1 no
Lime (big) 2-3 no
Green chilly 1-2 no
Salt To taste
Pepper powder To taste
Low fat yoghurt As required

METHOD

  1. In a blender, add 2 cups of cooked fresh kidney beans(not the dried one), overnight soaked and drained 2/3 cup of chick peas, ginger, garlic, basil leaves, mint leaves, onion, lime juice, green chillies, salt, pepper powder. Grind it well until it becomes a smooth paste. If required you can add low fat yoghurt to get the required consistency
  2. Serve with veggie sticks, chips or crackers
  3. You can even use it as a base for any rolls/ frankies

BENEFITS:

Rich in proteins and probiotic. Excellent for gut health and immunity boosting

  1. Tahini Recipe
Ingredients Amount
Roasted sesame seeds 2 TBSP
Olive oil 2 TBSP
Lemon juice 1 ½ TBSP
Garlic clove 1-2 no
Hung curd 1 cup
Salt to taste

METHOD:

1 Take roasted sesame seeds, olive oil, garlic cloves and lemon juice in a blender

  1. Blend until smooth paste
  2. Mix the above tahini paste with hung curd. Mix well and serve chilled with flat breads/ khakhras/ veggie sticks

BENEFITS:

Great source of Calcium, probiotics and healthy fats

  1. Healthy mayo
Ingredients Amount
Grated cucumber ½ cup
Grated carrot ½ cup
Hung curd 1 cup
Oregano, ½ tsp
Parsley, Basil leaves, Chilli flakes ½ tsp
Salt to taste
Freshly ground Pepper powder ¼ tsp

METHOD:

  1. In a bowl, mix all the above ingredients
  2. Serve chilled with flat breads/ khakhras/ homemade tortilla/ nachos/filling in wheat breads

BENEFITS:

Alkaline in nature, coolant, good source of fiber too

  1. Peanut/ Almond butter
Ingredients Amount
Roasted peanuts/ almonds (salted/ unsalted) 200 gms
Olive oil/ Ricebran oil As required
Organic honey Optional
Salt to taste

METHOD:

  1. In a blender jar, take roasted salted/ unsalted peanuts or almonds and grind till finely coarse
  2. Add a few drops of olive oil
  3. Blenderize until smooth paste.
  4. Add salt and organic honey if required
  5. Peanut butter/ almond butter is ready to serve with khakhras/ whole grain bread/ sandwiches/ fruits/ vegetable sticks

BENEFITS:

Healthy fats. Serves as a great pre and post workout meal option

  1. Guacamole
Ingredients Amount
Avocados (ripe) peeled, pitted 2 no
Tomatoes, ripe 1 no
Fresh Coriander leaves 3 TBSP
Onion, finely chopped ¼ cup
Garlic, minced ½  tsp
Lime (big) 1 no
cumin powder ½  tsp
Salt To taste
cayenne pepper (optional) 1 pinch

METHOD:

  1. In a medium bowl, mash together the avocados, lime juice, and salt.
  2. Mix in onion, cilantro, tomatoes, and garlic.
  3. Stir in cayenne pepper, cumin seed powder
  4. Refrigerate 1 hour for best flavour, or serve immediately.

BENEFITS:

Rich in healthy unsaturated fats. Antioxidants, vitamins and minerals
