Carrots, Beetroots and Tomatoes For Good Health!

carrots, beetroots and tomatoesStress, oily foods, greasy foods, smoke, smog and air pollution give rise to free radicals in our body. These free radicals cause cell damage and bring about aging in us. Antioxidants capture these free radicals and protect our cells and blood vessels from the damage caused by them. Thus, antioxidants are great for our skin, heart, metabolism and are anti-aging. Carrots, Beetroots and Tomatoes are among the vegetables that have the highest amount of these antioxidants. Carrots are rich in Vitamin A that helps build immunity and eyesight, while beetroots have blood pressure lowering properties and tomatoes are heart healthy and skin brightening!

The combination of carrots, beetroots and tomatoes helps in weight loss and curb constipation as well. The nutrients of these are best absorbed when taken in combination with each other. Though available throughout the year, they’re the best during winter! Here are some easy ways to make very low calories, yet satiating recipes with this wonderful combination. 

3 Healthy Recipes Using Carrots, Beetroots and Tomatoes

1. CBT Juice
Want to get rid of toxins? Employ Carrots, Beetroots and Tomatoes for a cleansing, detox drink that will flush out all those toxins! 

What you will need: 

  • Carrot – 1 medium sized 
  • Beetroot – 1 
  • Tomato – 1 
  • Mint – 5-6 leaves
  • Coriander – 2-3 twigs 
  • Rock salt and lemon juice – to taste 

Method:

  1. Peel and roughly chop the carrot, beetroot and tomato
  2. Blend them along with mint and coriander leaves in a blender/juicer
  3. Add some water if required while blending to bring a juice like consistency.
  4. Add lemon juice, rock salt and mix well

Important: Do not strain, or you’ll lose all the good fiber. Drink the juice within 15 minutes of preparation or else the juice gets oxidised and may lose most of its healthy goodness. The best time to have this is on an empty stomach in the morning – do not eat anything for the next half an hour. 

2. CBT Salad
Confused about what to eat for lunch? Want something that’s filling and low on calories? Let this CBT Salad be your go-to recipe! 

What you will need: 

  • Carrot – ½ cup grated
  • Beetroot – ½ cup 
  • Tomato – ½ cup finely chopped            
  • Onion – ¼ cup 
  • Coriander leaves – 1 tablespoon chopped
  • Mint leaves – 1 tablespoon 
  • Lemon juice – 1 tablespoon 
  • Sesame seeds – 1 teaspoon 
  • Salt to taste 
  • You can also add: Yoghurt, chopped walnuts, feta cheese

Method:

  • Mix and toss all the chopped and grated vegetables
  • Add lemon juice and salt.
  • Garnish with chopped coriander and mint leaves
  • You can pour a temper of curry leaves and mustard seeds over this salad
  • Yoghurt can be mixed with this salad
  • Add some finely chopped walnuts or sesame seeds for a nutty flavour and the good fats.
  • Feta cheese will add some first class protein

Important: Wash all the vegetables properly. Squeeze the lemon just before consuming the salad. Salad should be consumed within 20-25 minutes of preparation to avoid the nutrients getting oxidised. Start lunch with this salad as it will curb post-meal glucose excursion. Aids weight loss, as it is filling and has less calories.

3. Soup
In the mood for soup? Here’s something we’re sure you haven’t tried before! 

  • Tomatoes – 5 
  • Carrots – 2 
  • Beetroot – 1 
  • Ginger garlic paste – 1 tablespoon 
  • Cinnamon stick – 1 inch 
  • Bay leaf – 1 
  • Ghee (Clarified butter) – 1 tablespoon 
  • Salt, cumin powder, chili flakes, fresh pepper, dry herbs (oregano, basil, parsley) to taste.

Method:

  1. Pressure cook the carrots, beetroots and tomatoes with the cinnamon stick, bay leaf and enough water to soak for 2 whistles
  2. Cool down the boiled vegetables. Discard the cinnamon stick, bay leaf and the skin from the tomatoes. Puree the rest in a blender
  3. Heat 1 tablespoon ghee (clarified butter) in a medium pot. Add the ginger garlic paste and be sure to not burn it
  4. Carefully pour the puree in the pot
  5. Add cumin powder, salt, chili flakes and fresh ground pepper as per taste
  6. Bring to a boil on medium high heat, stirring the mixture a few times
  7. Sprinkle some dry herbs and serve hot! 

Important: The best time to have this soup is for a light dinner or a healthy evening snack.

Gond Ladoo: Your Much Needed Winter Essential

Gond LadooAs winter knocks at your door, you might have noticed your Granny prepare Gond Ladoo. It is loved by both kids and adults alike. Gond Ladoo is the best warming food during winter and is quite a healthy snack especially in North India. It contains natural Gond (edible gum) which is extracted from the bark of trees.

Benefits of Gond Ladoo During Winter

  • It helps to keep the body warm in falling temperatures.
  • It prevents the body from cold, seasonal virus infections and keeps one safe from winter illnesses.
  • It helps improve eyesight.
  • It boosts immunity and improves stamina if prepared with Jaggery (Gud).
  • It is enriched with protein, fiber, calcium, and magnesium which makes bones and tissues strong.
  • Anti-inflammatory and good for arthritis as it lubricates the joints and provides relief for back & joint pain.
  • Due to high fiber it is effective in treating constipation.
  • It also improves sexual inadequacy or weakness in men.
  • Nourishing food for pregnant women as it helps in strengthening bones and prevents back pain after birth.
  • The combo of fat, fiber and protein is good for lactating mothers to meet the extra calories requirement and to speed up recovery. It increases milk production as well.
  • It is a wholesome, nourishing food for winter if someone lacks energy and feels tired.

Generally, Gond Ladoo is prepared with desi ghee, gond, coconut, lots of chunky nuts and dry fruits. Want to try it out if you haven’t already? Here’s the recipe!

What You Will Need:

  • Wheat Flour – 1 and ¼ cup
  • Gond (edible gum) – 4 tbsp
  • Dry Dates Powder – ¼ Cup
  • Jaggery Powder – ¼ Cup
  • Cardamom Powder – 1 tsp
  • Coconut Powder – 2 tbsp
  • Almond and Cashew Powder – 3-4 tbsp
  • Poppy Seeds (Khus Khus) – 1 tbsp
  • Dried Ginger Powder (optional) – ¼ tsp
  • White Pepper Powder (optional) – ¼ tsp
  • Desi Ghee (clarified butter) – 8-10 tbsp

How to Prepare

  1. Take a Kadhai, add 2 tbsp of ghee and roast all the Gond till it gets puffed and becomes crispy. Take it aside and grind the Puffed Gond in a mixer.
  2. Now add the dates powder Jaggery powder, cardamom powder, nut powder, poppy seeds, ginger powder, and white pepper powder and grind all together in a grinder.
  3. In the same Kadhai, add 2 more tbsp of ghee and roast wheat flour on low flame till it turns golden brown and you get a nice aroma!
  4. Add the previous mixture to the kadhai with wheat flour and mix well. Cook for 5-7 minutes more and add the remaining ghee.
  5. The whole mixture should look wet. Take it off the gas.
  6. Grease your palm with a few drops of ghee and start moulding them into a Ladoo shape. You can use a little more ghee while rolling them. 
  7. You can store these Gond Ladoos in an airtight container easily for a month and serve it anytime.

Please note that excessive intake may cause mild abdominal discomfort and increase your calorie intake as well. You must eat only one Ladoo in the morning or evening with warm milk.

4 Healthy Recipes For Christmas & New Year Celebrations!Festivities always cause a dilemma in terms of what to eat, what to avoid and how much to eat. It’s often hard to resist good food. But if you have health goals to adhere to and are looking for something nutritious, we’ve got you covered! Here are 4 healthy recipes for Christmas and New Year that you can try. They are easy to cook, delicious and absolutely healthy!

4 Healthy Recipes For Christmas & New Year

1. Gourmet Almond Eyes (Almond Cookies)

Whether it’s for someone you love, your granny or your family and friends, these nutritious almond, jam-filled cookie bites will show your loved ones how much you care about them and their health.

Ingredients (For about 40 cookies)

  • 1/4 organic lemon
  • 200g (8 oz) all-purpose flour
  • 150g (6 oz) butter
  • 100g (4 oz) sugar
  • 1/2 pack vanilla sugar
  • 1 egg
  • 100g (4 oz) ground almonds
  • 175g (7 oz) jam

Method:

  1. Grate the lemon rind. Knead it with flour, butter, sugar, vanilla sugar, egg and almonds to form a smooth dough.
  2. Pre-heat the oven to 180°C (350°F, gas 4). Roll out the dough thinly in portions between two sheets of grease-proof paper. Cut out the biscuits. Cut out holes in the center of half of them. Bake on a baking tray lined with grease-proof paper for about 12 minutes.
  3. After they cool off, spread jam (e.g. strawberry jam) on those without holes. Place the biscuits with the holes on top. Optionally, sprinkle with icing sugar.

Facts:
Preparation: 45 minutes
Baking: 12 minutes
Calories per cookie: 60 kcal

2. Christmas Apple Cake

Eating an apple a day in winter provides many benefits for our health. The yellowish flesh in apples is rich in bioflavonoids, especially carotenoids. These pigments are antioxidants that can help protect you against cancer and other diseases by reducing the cellular damage caused when the body burns oxygen. The antioxidant in apples, which includes Vitamin A, Vitamin C and beta-carotene can help prevent cancer, including oral cancer.

Apple also aid weight loss – they are low in calorie fruit, making them perfect for people who want to lose weight. They contain fewer calories with no saturated fat, and the fiber in apples suppress hunger.

If you are wondering what to make this Christmas or for your New Year’s Eve party, here is a recipe for Apple Cake that is moist, yummy and comes with a rich, sweet butter sauce.

Ingredients:

  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1/2 cup butter
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon ground cinnamon
  • 2 medium tart apples, peeled and grated.
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup cream
  • 1/4 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1 egg

Method:

  1. In a mixing bowl, put cream, butter and sugar and then beat in an egg and vanilla.
  2. Combine the flour, baking soda, cinnamon, salt and nutmeg. Gradually add to the creamed mixture.
  3. Stir in apples and walnuts. Pour into a greased 8-inch square baking dish.
  4. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean.
  5. Meanwhile, in a saucepan, melt butter. Stir in sugars and cream.
  6. Bring to a boil over medium heat, stirring constantly.
  7. Reduce heat and let it simmer, uncovered for 15 minutes, stirring occasionally. Serve over warm cake.

3. Chicken and Bell Pepper Tomato Chilli Stir Fry

Ingredients: 

  • 2 Chicken breast
  • Salt and pepper (as per taste)
  • All-purpose flour (for coating)
  • 1 Red chili pepper
  • 2 teaspoon Vegetable oil
  • 1 tablespoon Vinegar
  • 2 tablespoon Sweet chilli sauce
  • 2 tablespoon Ketchup
  • Bell peppers

Methods: 

  1. Chop the chicken into bite-sized pieces and sprinkle with salt and pepper. Coat the chicken in flour.
  2. Heat a frying pan with vegetable oil, add the red chilli pepper and fry the chicken until golden.
  3. Add vinegar and steam the chicken.
  4. Chop the bell peppers into 2 cm pieces, add to the frying pan and fry.
  5. Season with the sweet chilli sauce and ketchup.

Benefits of Chicken: Chicken is a great low-fat source of protein and the B Vitamin niacin. Protein is essential for maintaining muscle mass and is commonly included in weight-loss diets.

4. Christmas Baked Brown Rice Pudding

Rice pudding is for those who love homemade comfort food!

Ingredients:

  • 1 teaspoon vanilla extract
  • 2 cups milk
  • 3 beaten eggs
  • 1/3 cups raisins
  • 1 cup uncooked brown rice
  • 1/2 cup white sugar
  • 1 pinch ground nutmeg
  • 1/2 teaspoon salt

Method:

  1. Place uncooked rice in a 3-quart saucepan, and add water. Bring to a boil.
  2. Reduce heat and simmer for 25 to 30 minutes.
  3. Preheat the oven to 325 degrees F (165 degrees C).
  4. In a large bowl, combine beaten eggs, milk, sugar, vanilla extract, and salt. Mix well.
  5. Stir in rice and raisins.
  6. Pour into a baking dish. Bake uncovered for 30 minutes. Stir the pudding and sprinkle with nutmeg.
  7. Bake for an additional 30 minutes or until a knife inserted halfway between the edge and the center comes out clean.
  8. Enjoy your warm pudding.

7 Healthy, Nutritious SWEETS

When you hear the word “sweets,” one expects loads of sugar and fatty foods. But who ever said that sweets cannot be nutritious and healthy?

There are some healthy and nutritious sweets which will not only satisfy your sugar cravings but are also sure to help you improve your health and immunity. Let’s have a look at these 7 recipes I have in store for you.

1. Date Rolls

Ingredients Amount
Dates 1 cup
Almonds 8-10 nos
Dry ginger powder 1 tbsp
Gum (gond/ dink) 1 tsp
Cow’s Ghee 1 tbsp

Note on Gum (Gond): This edible gum, also known as gond katira or Tragacanth gum, is a natural plant exudate. It is known for being a coolant and is rich in soluble fibre. It is easily available where grains and dry fruits are sold.

METHOD:

  1. Warm the ghee in a pan. Once it heats up, add the gum and stir until it swells. Remove to a plate.
  2. In the remaining ghee in the pan, sauté the dates for a few minutes.
  3. Turn off the heat and add the chopped almonds, dry ginger powder, and the fried gum.
  4. Mix it well and form into rolls. Garnish with almond slivers.
  5. Serve at room temperature.

P.S: You can add a little cocoa powder to give it a chocolaty taste. You can also use walnuts instead of almonds.

BENEFITS: Dates are a rich source of iron, ginger powder is anti-inflammatory, almonds are a rich source of Omega-3 fats, and gum is good for bones. All in all, this is a super immunity and health-booster sweet.

2. Sesame Chikki or Blocks

Ingredients Amount
Roasted Sesame seeds/ Unsalted peanuts 1 cup
Jaggery ½ cup
Oil For greasing

METHOD:

  1. Take ½ cup of jaggery pieces in a pan. Over low heat, melt the jaggery, stirring continuously.
  2. Keep stirring until it attains a hard-ball consistency (check by dropping some jaggery syrup into cold water; it should harden like candy).
  3. Once the hard-ball consistency is achieved, add the roasted sesame seeds (or peanuts) to the jaggery syrup. Mix well.
  4. Remove the mixture from the heat and pour it onto a greased platform. Roll the mixture into a thin film (you must roll this while it is hot).
  5. It will harden as it cools, after which you can break it into small pieces.

P.S: You can use almonds, walnuts, dalia (roasted unsalted gram dal), or rajgira (amaranth seeds) instead.

BENEFITS: Jaggery is a rich source of iron, and til (sesame seed) is a super source of calcium. Jaggery-til chikki is excellent for women during their menses, as it can help ease menstrual pain. When peanuts or other nuts are used, it serves as an excellent, preservative-free energy bar.

3. Makhana (Foxnut) Kheer

Ingredients Amount
Makahana/ foxnut 1 cup
Low-fat milk 500 ml
Cardamom powder 1 tsp
Almonds 6-8 nos
Ghee 1 tsp
Jaggery Approx. 3-4 tbsp
Saffron Optional

METHOD:

  1. In a pan, take a tablespoon of ghee and roast the foxnuts. You can powder some of the foxnuts if you want a thicker consistency.
  2. In another pan, heat the milk. When it comes to a boil, add the foxnuts, stir well, and simmer for 5-10 minutes over medium heat, stirring occasionally.
  3. Add the cardamom powder, a pinch of saffron, and almond slivers.
  4. Add jaggery and stir well until dissolved.
  5. If you want a thicker consistency, simmer for a few minutes more, stirring occasionally.

P.S: You can replace Foxnuts with brown rice, grated carrot, grated bottle gourd, Haleem seeds, or Ragi.

BENEFITS: Foxnut is a rich source of calcium, high in fibre, antioxidants, and protein. When combined with milk, its nutritional value increases further. Almonds add Omega-3s and fibre. It serves as an excellent food for toddlers and infants, as well as for pregnant and lactating females.

4. Mango Yoghurt Candies

 

Mango Yogurt

Ingredients Amount
Low fat fresh yoghurt 1 cup
Ripe Mango puree 1 cup

METHOD:

  1. In a blender, mix the low-fat fresh yoghurt and the ripe mango puree well. Do not add any sugar, as the fruit has natural sweetness. If needed, add a stevia-based sweetener.
  2. Pour this blended puree into moulds. Freeze for 6-8 hours. You can add wooden sticks to give an ice lolly/popsicle effect.
  3. Unmould and serve immediately.
  4. Choose fruits that are fresh and ripe, as they are sweet and do not require sugar substitutes. You can use fruits like strawberries, litchi, kiwi, blueberry, or custard apple.

BENEFITS: Yoghurt is a great source of probiotics, which maintain gut health. This recipe is also a great source of vitamins and minerals from the fruit. It makes for an excellent sugarless, low-fat ice cream with no added preservatives.

5. Lapsi

Ingredients Amount
Broken Wheat / Dalia/ fada 1 cup
Jaggery 1 cup
Cardamom powder ½   tsp
Almonds 6-8 nos
Ghee 2 tbsp
Raisins Optional

METHOD:

  1. Heat a tablespoon of ghee in a wide pan over medium heat. Stir in the broken wheat and roast until it gets a nutty aroma and the colour changes to golden orange.
  2. In another pan, dissolve the jaggery in 2 cups of warm water. Strain if you see any impurities.
  3. Pour the jaggery water and cardamom powder into the broken wheat, stirring continuously until well combined. Reduce the heat to low, cover the pan, and simmer for 10-15 minutes, stirring occasionally, until the wheat is tender.
  4. Allow the Lapsi to rest (covered) for five minutes.
  5. Stir in some of the almond slivers and raisins. Garnish with the remaining almond slivers and serve hot.

P.S: You can also use oats / coarsely ground Moong Dal Flour instead of broken wheat

BENEFITS: Broken wheat is rich in fibre, manganese, magnesium, and phosphorus. It contains all the nutrients present in whole wheat. When combined with jaggery, it becomes a nutrient-dense sweet.

6. Puran Poli

Ingredients Amount
Whole wheat flour 1 cup
Tur dal/ Chana dal / lentil 1 cup
Jaggery 1/2 cup
Cardamom powder ½   tsp
Nutmeg powder ¼ tsp
Ghee 1 tbsp
Oil 1 tsp
Saffron Optional
Salt To taste

METHOD:

  1. In a large bowl, combine the wheat flour with salt. Knead with water to form a firm dough. Add 1 teaspoon of oil, coat the dough, and knead for a couple more minutes until smooth. Cover and keep aside for 10-15 minutes.
  2. Cook the dal with 1.5 cups of water until soft. You can also pressure cook the dal for one whistle and simmer on low heat for a few minutes. Drain any excess water.
  3. Heat ghee in another pan over medium heat. Add the jaggery and stir until it dissolves completely.
  4. Stir in the cooked dal, saffron, cardamom, and nutmeg. Continue stirring the mixture until it thickens and leaves the sides of the pan. Turn off the heat and let the puran (filling) cool completely.
  5. Divide the dough and puran mixture into 6-7 equal portions. Roll out a roti (flatbread) with the help of dry wheat flour. Place a portion of the puran in the centre, bring the edges of the roti together, and fold over to cover the filling completely, sealing it.
  6. Flatten the stuffed dough, dust with a little flour, and gently roll it into a medium-sized poli. Do not put too much pressure, or the puran will come out.
  7. Preheat a skillet (tava) on medium-high. Place the Puran Poli onto the skillet and cook until golden brown on both sides, applying a minimal amount of ghee to give it a crispier texture.
  8. Repeat for all remaining portions.

BENEFITS: This is an excellent cereal-pulse combination, providing good quality proteins. It is also a good source of iron from the jaggery and has a high satiety value since it’s high in protein and fibre.

7 Dry Fruit Barfisugarfree dryfuit barfi 1

Ingredients Amount
Seedless Dates (chopped) ½ cup
Dry figs (chopped) ½ cup
Almonds (finely chopped) ½   cup
Walnuts (finely chopped) ½   cup
Cashew+ Pistachio mixture (finely chopped) ¼ cup
Milk 1-2 tablespoon
Cardamom powder A pinch
Nutmeg powder A pinch
Ghee ½ tbsp.

METHOD:

  1. In a pan, heat the ghee. Roast all the dry fruits (except the dried figs and dates) until you get a nutty aroma.
  2. Blend the chopped dates and figs with 1-2 tablespoons of milk until smooth.
  3. In a nonstick pan, sauté the date-fig paste until golden brown, stirring continuously until the mixture leaves the sides of the pan.
  4. Add the roasted dry fruits to this mixture and mix well.
  5. Pour this mixture into a greased pan and smoothen it well. Allow it to rest until the mixture is cooled completely and firms up.
  6. Cut the Dry Fruit Barfi into equal squares. Garnish with almond slivers if desired.

BENEFITS: This serves as an excellent nutrition bar. It is high in Omega-3s, iron, calcium, fibre, and various multivitamins and minerals. A great option for all.
