Does Food Cooked In Different Utensils Impact Your Health?

Different UtensilsIf cooking is an art, then the utensils are the canvas. With different cuisines in our country, even the variety of utensils are different – each has its own use. This makes it essential to know how the metals react to different foods. While we’re busy choosing fancy non-stick cookware or microwave friendly utensils, we need to understand that they aren’t safe as they can harm your health in the long run. Back in the day, clay pots, iron, brass and bronze utensils were used for cooking as they not only preserved the nutrients in food but also enhanced the taste.

How Do Different Utensils Impact Your Health? 

  • Stainless Steel: It is the most commonly used iron alloy made up of chromium, nickel, carbon and silicon and has aluminium or copper coating at the bottom for heating purposes. Stainless steel is considered the safest metal to use for cooking as it does not react with food or flake or leach harmful chemicals into the food leading to no adverse effects on the immune system.
  • Aluminium: Our baking utensils are mostly made up of aluminum as the metal is ideal for high temperatures. Aluminum also has a larger than life use in our Indian Kitchen, in the form of utensils or a foil wrap.  Food cooked in aluminum utensils tends to absorb aluminum because aluminum dissolves into food and water during the cooking process. But cooking alkaline foods in aluminum is completely safe for our immune system as the amount of aluminum soaked is very less. It is always better to avoid cooking acidic food like tomatoes or sauerkraut in aluminum as it can react quite badly with the metal and may release harmful compounds in your meal, making it dangerous to consume.
  • Cast Iron: A very popular metal for our kitchens. All our kadhai, tavas and skillets are made of Cast Iron. Cooking in iron is an excellent way to add some iron in our diet as it leaches iron into our food. Iron is not only a metal but also an essential mineral required by the body. Imagine cooking an iron rich food in an iron pan, this would help you add value to the daily required Iron for your body.  For example , premenopausal women require 18mg of iron per day and A serving of scrambled eggs cooked in a cast iron skillet increased from 1.49 mg to 4.76 mg of iron. And along with it, we can prepare tomato sauce in an iron pan that can provide 5mg off iron which is 60% of RDA (Recommended Dietary Allowance). Infact, cooking regularly in iron utensils can help you hit the struggle to achieve daily iron RDA.
  • Non-Stick: Mostly called as Teflon coating, this is an easy cookware to use and clean.  But unfortunately, as a Nutritionist, I do not recommend excessive use of these utensils as the chemicals used to manufacture the non-stick coating can harm human health by causing abnormal thyroid hormone levels, liver inflammation, cancer, elevated cholesterol and reduced immune system response. We can use non-stick for a few recipes like pancakes, cheela or dosa which is not a daily staple meal. But, I would not recommend making paranthas or subzis on a daily basis.
  • Glassware: Considered another Neutral cookware and a good heat conductor to consider for baking your dishes. Although a few unhealthy components such as lead and cadmium leach out in food while cooking but the amount is minimal to harm human health.
  • Ceramic: is considered to be the safest when it comes to healthy cooking. An environment friendly cookware made using all-natural clay, water and gas. This can be a great replacement for dishes we cook in Teflon non-stick pans and pots as it does not affect the immune system adversely.
  • Copper: An excellent metal to promote health from your kitchen. Copper utensils with tin or nickel coatings can be used for cooking rice due to its antibacterial properties or storing drinking water due to its medicinal properties, the ability to improve the digestive system, slow down ageing and heal wounds faster. Copper can also detoxify the body and increase Hemoglobin. But you need to take care while cooking in copper as acidic foods react with copper and can hinder the taste. 

Every metal has its own pros and cons. The ideal way to cook is to choose the perfect cookware as per the recipe. Try some more ancient methods of cooking in iron, clay/earthen pots as they are not only safe but loaded with various health benefits like retaining/adding nutritive value to the food and helping the immune system.

Jaggery and its Benefits!

Benefits of JaggeryJaggery is one of the most common ingredients found in Indian kitchens. Apart from being one of the best natural sweeteners, it also offers a plethora of health benefits. It is good for your cardiac health, digestion, improved metabolism, blood circulation, respiratory system, menstrual cramp or pains, sexual potency and stronger immunity.

About 70-80% of the world’s Jaggery production takes place in India, where it is commonly called gur/gud. It is primarily made from Sugarcane but nowadays it can be made from coconut sap and date palm as well.

How is Jaggery Made?

Jaggery is made by first extracting juice from Sugarcane. The canes or palms are pressed to extract the sweet juice or sap. The juice is then allowed to stand in big containers so that any sediment settles to the bottom. It is then strained to produce a clear liquid.

The juice is then concentrated by placing in a very large, flat-bottomed pan and boiled. During this process, the Jaggery is stirred and the impurities are skimmed off the top until only a yellow, dough-like paste remains. This paste is then transferred to containers where it cools into Jaggery blocks.


Jaggery vs Refined Sugar

Jaggery contains more nutrients than refined sugar because of its molasses content. Molasses is a nutritious by-product of the sugar making process, which is usually removed when making refined sugar. Molasses adds plenty of micro-nutrients to the final product. Hence, it is more nutritious as compared to white refined sugar!

10 Benefits of Eating Jaggery

  1. Prevents and Treats Common Cold: Consumption of Jaggery helps fight symptoms of a cold and cough. Mixing a small piece of it in warm water or tea can help greatly.
  2. Immunity Booster: Loaded with antioxidants and minerals like zinc and selenium, which helps curb free-radicals responsible for inflammation, Jaggery helps boost resistance against infections, hence building stronger immunity.
  3. Detoxifies the Liver & Other Organs: It plays a major role in detoxifying internal organs such as liver, stomach, intestines, kidneys, etc. by flushing out harmful toxins from the body.   8. Acts as a Cooling Agent: Eating a small piece of it everyday helps in maintaining normal body temperature, which helps in keeping your stomach cool. Experts recommend drinking GurSharbat (soaked in ice cold water) during the summer months to cool off.
  9. Prevents Respiratory Problems: By consuming Jaggery regularly, you can prevent many respiratory problems such as asthma, bronchitis, etc. Eating it with sesame seeds is beneficial for the respiratory system and preventing allergies related to it.

Quick Til Ladoo/Bars Recipe

You will need:

  • 1 Cup White Sesame Seeds
  • 1 Cup Jaggery
  • 1 tbsp ghee
  • ¼ tsp Cardamom Powder
  • Nuts of your choice

Method:

  • Roast sesame seeds on medium heat till light brown
  • Heat ghee in pan and add Jaggery
  • Simmer on slow flame till it melts
  • Put off flame and add the roasted til (and crushed nuts) and mix well
  • Grease your palms with ghee and make small balls or set in a plate and cut bars out of it

More often than not, we are unaware of hair loss. We are so busy with our daily routine and hectic work schedules that we do not pay attention to these matters. However, let me tell you that it is very important to be aware of everything that is happening within us. We need to understand the reason for hair loss. Anybody can experience hair loss. It is not peculiar to men alone. Women and children can also go through hair loss.

Everyone loses hair. It is normal to lose about 50-100 hair every day. But, if you see bald patches or lots of thinning, you may be experiencing hair loss. There are many causes of hair loss. Women may notice hair loss after giving birth. People under lot of stress can see noticeable hair loss. Some diseases and medical treatments can cause hair loss. Even how you style and care for your hair can cause hair loss.

It may be temporary or permanent, and the most common cause of hair loss is a medical condition called hereditary hair loss. Hair loss can happen in many different ways, depending on the problem that’s causing it. It can come suddenly or gradually and affect your scalp.

Let us take a detailed look at the some of the reasons that cause hair loss:

  • Hormonal Changes: The most common hair loss is a hereditary condition called male pattern baldness or female pattern baldness. Genetically susceptible people and certain sex hormones trigger a particular pattern of permanent hair loss. Most common in men, this type of hair thinning can begin as early as puberty. Hormonal changes and imbalance can also cause temporary hair loss. This could be found in women due to child birth or the onset of menopause.
  • Medical Conditions that can lead to hair loss are thyroid problems, skin infections or other skin disorders. Hair loss can also be caused by Alopecia Areata, which is a condition that starts suddenly and causes patchy hair loss in children and young adults. This condition may result in complete baldness (Alopecia Totalis) but in about 90% of people with the condition, the hair returns within a few years.
  • Medications can also cause hair loss. Drugs used to treat cancer, arthritis, depression, heart problems and blood pressure are some of them.
  • Physical or Mental Shock: Many people experience a general thinning of hair several months after a physical or emotional shock.
  • Hair Pulling Disorder: Mental illness causes people to have an irresistible urge to pull out their hair whether it’s from the scalp, eyebrows or other areas of the body. Hair pulling from scalp often leaves patchy bald spots on the head.
  • Certain Hair Styles: Traction hair loss can occur if the hair is pulled too tightly into hairstyles such as pigtails and cornrows.

For some types of hair loss, hair may grow without any treatment while for other types of hair loss treatment may help the hair grow back.

It is very important to understand the causes of hair loss. You should make a note of all the possible changes that happen in your day to day life. Understand the cause and work towards it. Few tips such as eating healthy, nutritional and balanced food may help. Avoid tight hairstyles and avoid compulsive twisting, rubbing or pulling of your hair.

Here are a few tips that I have chalked out that will help you maintain healthy hair. Certain foods in our diet will keep your scalp healthy. Foods that contain proteins, iron, silica and zinc help preventing hair loss.

  • Protein: Hair is primarily made of protein and therefore, it makes sense to eat a protein rich diet. Stick to leaner proteins such as fish, chicken, calf’s liver, low fat cheese, eggs, almonds, beans and yogurt. Soy milk and tofu are also smart options to add to your diet as they are high in protein and low in bad fats.
  • Iron: Iron plays a key role in manufacturing hemoglobin, the part of blood that carries oxygen to your body‘s organs and tissues. Adding more iron to your diet doesn’t mean you have to feast on liver, day in and day out, but when you are craving for something sweet, remember that dried fruits and cherry juice are packed with iron. Try eggs, dates, raisins, dark green leafy vegetables such as Kale and whole grain cereals. Vitamin C improves the absorption of iron, so fruits such as orange, strawberries and lemons should be in your grocery list of foods that prevent hair loss.
  • Silica: Add silica to your daily menu and see the difference because body uses silica to help it absorb vitamins and minerals. If you are not consuming silica, eating vitamins might not help much. Silica can be found in bean, sprouts and skin of cucumber. You will also find it in red and green peppers and potatoes.
  • Zinc: Many men who suffer from hair loss are found to have zinc deficiencies. Zinc plays a key role in many of the body’s functions, from cell reproduction to hormonal balance, which in turn affects hair growth. Zinc manages the glands that attach to your hair follicles. Eat Zinc-heavy foods such as red meats, poultry, mussels, shrimp, nuts, and oysters.

Just as your overall health will improve from eating a balanced diet, so should the health of your hair. Do not eat things that speed up hair loss. You may be experiencing a thinning on top already, but you can counteract this problem (or at least slow it down) by eating from every food group daily — concentrating on foods that are rich in protein, iron, silica, and zinc.

The Weight Loss Link You May Be Missing – Dietary Minerals

The most challenging case for a Dietitian is perhaps – Weight Loss! Why – because, each case is unique and the most important task is to find out the root cause of weight gain (which, contrary to popular belief, is not always overeating or lack of physical activity). It is prudent that the underlying cause be identified and targeted, not only to ensure sustainable weight loss but also because these reasons are linked to diseases in waiting as well. Genetic predisposition, low BMR, stress, lack of sleep, hormonal disturbance, chronic mild dehydration etc. are few recognized causes of weight gain.

However, if adjusting your diet, water intake, exercising more and controlling your stress and sleep hasn’t helped you reach a healthy body weight, check your mineral status. Mineral deficiency often happens slowly over time and can be caused by an increased need for the mineral, lack of the mineral in the diet, or difficulty absorbing the mineral from food.

You may be suffering from deficiencies because the nutritional value of the produce has been steadily degrading for the last couple of decades. Increased intake of processed foods is another reason devoiding you of not only fiber but also many of the vitamins and minerals.

Since the deficiency symptoms of these minerals are largely general, they go unnoticed and hence get overlooked while diagnosing unexplained weight.

Let’s discuss four major minerals (or their deficiencies) that are directly or indirectly associated with your weight –

CHROMIUM: Chromium is an essential mineral that regulates insulin action and its effects on metabolism.Insulin is essentially the fat-loss gatekeeper, so anything that improves insulin efficiency is great for fat loss.

Chromium determines the way our body uses insulin. The glucose tolerance factor (GTF) interacts with insulin and regulates how much glucose (sugar) enters a cell. GTF encourages energy production (burns calories) and may also curb feelings of hunger.

Identifying the link between chromium and weight loss is crucial because someone who is overweight is often at high risk of becoming insulin resistant (diabetic).

Chromium is lost in the process of refining foods. For example, when sugarcane is refined into white sugar, 93 percent of the chromium is lost. Because our soils are depleted of chromium and because we consume more processed foods nowadays, chromium deficiency is becoming increasingly prevalent.

IODINE: The thyroid gland depends on iodine to manufacture thyroid hormone. The thyroid’s main function is to manage the body’s metabolism.

A shortage of iodine can cause changes to the thyroid gland and an under active thyroid gland slows your metabolism; you thus burn dramatically fewer calories and feel sluggish. Also, under active thyroid gland promotes excess weight and cellulite by causing water retention.

Inadequate intake of iodine was once a recognized problem that was solved by universal iodization of salt. Salt was fortified with Potassium Iodate to ensure controlled consumption by all sections of society.  Once this was done, the obvious symptoms of severe iodine deficiency disappeared from view, and little further thought was given to matter, though sub-clinical symptoms remained. Today’s health conscious consumers have lowered their salt intake and now fail to get even that small amount of iodine in their diets. Presence of goitrogens in certain foods is another cause of iodine deficiency arising from inadequate iodine utilization.

MAGNESIUM: Magnesium is needed to extract nutrients from food and for optimal insulin function. The more nutrients you extract from food the less you have to eat to feel full. When we aren’t getting what we need from our diet, the body will crave more food in an effort to obtain those vital nutrients.

Magnesium is also a vital nutrient for reducing stress which is one of the most important keys in fighting obesity. Magnesium supports healthy adrenal glands that control the release of adrenaline and cortisol, two hormones related to stress response. While these hormones are vital to living, too much of them can cause weight gain and other health problems. Magnesium helps regulate these hormones so they are not overproduced.

One of the major causes of Magnesium deficiency is over-medicating with pharmaceutical drugs. They prevent the body from absorbing magnesium.

IRON: Iron is a critical nutrient because it is essential for the synthesis of hemoglobin, a metalloprotein that carries oxygen from lungs to all the tissues in body. Diminished oxygen carrying capacity can leave you feeling very fatigued, lethargic and irritable. In this state, your body signals you to slow down physical activity and you may find yourself seeking opportunities to sit or lie down, thus leading to weight gain.

Also, low iron promotes fat storage and cause abnormal blood sugar elevation.

Reasons responsible for iron deficiency can be dietary as well as non-dietary. Your excess body weight too can contribute to iron deficiency. Inflammation associated with excess body weight elevates a hormone hepcidin, which has the net effect of reducing iron absorption from digestive tract.

Now, before you finish reading this article and jump to quick fix by googling for these mineral supplements, a word of caution -Over dose of these minerals, especially from synthetic sources, are extremely harmful. Do not take these minerals as supplements without professional guidance.

You may improve your mineral intake by following the golden rule – Go low on processed foods and buy your foods fresh, local and seasonal to remove any possible degradation in nutrient quality.

Don’t eat less, eat right and live a healthy active life.
