Healthy Eating: Sabudana Soup

Sabudana SoupSabudana Soup is an energy rich, wholesome soup that is packed with several health benefits. It is quite famous in tropical regions and many parts of India consume it during festivals. If you’ve been looking for a nice soup to warm you up during monsoon, this is it! So without further ado, let’s go over this delicious recipe! 

What You Will Need 

  • Sabudana – 1 cup 
  • Oil – 2 spoons 
  • Green Chilli – 1 (chopped) 
  • Coriander Leaves – 1 spoon (chopped) 
  • Tomato Puree – 1 
  • Cumin Seeds – 1 tsp 
  • Onion – 1 (chopped) 
  • Water – 3 cups 
  • Maggi Masala – 1 tsp 
  • Turmeric Powder – 1 tsp 
  • Salt to taste 

How To Prepare 

  1. Soak the Sabudana for an hour 
  2. In a pan, heat the oil and add the cumin seeds 
  3. Then, add the chopped onions, tomato, green chilli 
  4. Saute well and add turmeric along with the coriander leaves 
  5. Add water and salt (as per taste) and then add the Maggi masala 
  6. Cook for 3-4 mins and your Sabudana Soup is ready!

Healthy Eating: Schezwan Dosa

Most of us are avoiding that delectable street food thanks to the monsoons. But, what can we do in those tiny moments of weakness when we crave it more during the rains? It’s only natural to feel this way after braving the scorching summer heat and facing the drop in temperature which makes our body crave for some nice warm, cozy, comfort food. While it may sound like a legitimate reason to indulge, let’s keep in mind that it needs to be healthy too! So here’s a mouthwatering street food recipe with a healthy twist – let’s learn to make some Schezwan Dosa! 

What You Will Need 

For Dosa:

  • Semolina – ½ cup 
  • Rice Flour – ½ cup 
  • Multigrain flour – ½ cup 
  • Curd – 1 cup 
  • Flaxseed powder – 1 tbsp 
  • Salt to taste 
  • Schezwan sauce – 2 tbsp 
  • Oil for cooking

For Stuffing: 

  • Oil – 2 tsp 
  • Chopped garlic – 1 tsp 
  • Spring onion – ¼ cup 
  • Carrot – ¼ cup 
  • Cabbage and capsicum – thin juliennes 
  • Schezwan sauce – 1 tbsp 
  • Salt to taste 
  • Lemon juice – 1 tsp 
  • Chopped Coriander – ¼ cup 

How To Prepare the Schezwan Dosa

  1. First, grind the Semolina into fine powder. 
  2. Now mix the rice flour, semolina powder, multigrain flour, flaxseed powder and curd together. 
  3. Whisk it and make a pouring consistency batter adding water. 
  4. Keep it aside for 15-20 minutes. Then add salt and whisk the batter once more.
  5. For the stuffing, heat oil in a pan and add all the vegetables along with salt. Sauté for 2-3 minutes. 
  6. Now add the schezwan sauce and lemon juice. Turn the gas off and cover the pan for 2 minutes.
  7. For the dosa, first heat a dosa tawa and spread a ladle full batter. Spread it over to get a round dosa. 
  8. Let it cook till the edges get light golden brown. 
  9. Now spread some schezwan sauce over the dosa and put the vegetable stuffing over it.
  10. By this time, the dosa is crispy and golden brown. Sprinkle some freshly chopped coriander leaves and fold the dosa over. 
  11. Serve hot with any sauce or chutney of your choice.

Healthy Eating: Corn Tikkis

Healthy Recipe

We can all agree that there is something almost nostalgic about breathing in the fresh aroma of corn during the monsoons! Whether boiled or roasted on the cob, relishing the sweet taste of corn is quite the treat during this season. Let’s relish this monsoon treat by putting a healthy twist on corn and prepare some tasty and nutritious Corn Tikkis that you can enjoy.

What You Will Need: 

  • Boiled and Grinded Corn Kernels – 1 Cup
  • Finely Chopped Capsicum, Onion, Carrot, Coriander – 2 tbsp each
  • Boiled Corn Kernels – 2 tbsp
  • Boiled Potatoes – ½ cup
  • Ginger Paste – 1 tbsp
  • Green Chilli Paste – 1 tbsp
  • Red Chilli Powder, Coriander + Cumin Seeds Powder – 1 tsp each
  • Garam Masala – ½ tsp
  • Salt and Chaat Masala – As per taste
  • Wheat Rusk Powder – 2 tbsp
  • Oil For Roasting

Method:

  1. Take a pan, heat 1 tsp of oil and add the ginger paste to it. Saute lightly and add grinded boiled corn and saute for 4-5 min on medium flame until the moisture flies away.
  2. In a big bowl, add mashed potatoes, all chopped vegetables, corn and grinded corn too along with all spices with salt and chat masala.
  3. Using your palms, mould the mixture into flat tikkis (cutlets).
  4. Spread wheat rusk powder on a plate and roll the tikkis in it.
  5. Heat a non-stick pan and brush some oil over it.
  6. Place the tikkis on the pan and roast for 4-5 min on medium flame until golden brown and then flip them over and cook for 4-5 mins on the other side as well
  7. Serve hot along with green chutney or chilly sauce.

Highlights of the Corn Tikkis:

  • Not a very quick recipe but will satisfy your taste buds just as similar to having a crispy pakoda.
  • The recipe will give us so many colourful vegetables which are all good for our system.
  • Corn is extremely good for your eyes with the phytochemicals & vitamins it provides
  • The insoluble fiber in this recipe aids digestion and promotes gut health.
