The Magic of Indian Masala Chai

masala chaiThe word Chai actually means tea in English and Russian. In India, it is also known as Masala Chai. More appropriately, it means spice blend. Tea has become a daily part of Indian life. It is now a key element of our culture which has spread throughout the world. Masala Chai is an everyday drink in most parts of India. It is common for Indians to delight themselves with 2 cups of it per day.

In almost every street corner and even office spaces, you will find a Chai Wallah (tea vendors) who prepares this traditional beverage. They prepare this rich Masala Chai over an open fire in small stands and stalls and serve it in clay tea cups called Kullarhs.

Authentic Masala Chai Recipe (Serves 2 cups)

Masala Chai ingredients

Ingredients

  • Water: 1 cup
  • Milk: 1 cup (organic whole milk, almond milk, oat milk)
  • Black tea/ loose leaf: 1 ½ teaspoon
  • Jaggery Powder: 2-3 teaspoons (more or less) or maple syrup, honey, brown sugar
  • Clove: 2-3
  • Cardamom: 2
  • Cinnamon: ½ stick
  • Peppercorns: 3-4 (optional)
  • Ginger: 2 slices or crushed
  • Star Anise: 1 (optional)

How to prepare

  • Lightly crush cardamom, cinnamon, clove, ginger, star anise, and peppercorn and add in boiling water
  • Add black tea/leaf and boil it for 2-3 minutes
  • Add sugar and milk
  • Bring it to simmer twice or more
  • Turn off the heat and strain it into your favorite mug
  • Your Masala Chai is ready!

A common myth is that green tea has more health benefit than black tea.  This is simply not true. It is because all tea (Black, Green, and White) comes from the same plant, Camellia Sinensis, they offer the same benefits. The spices which we have used in our Masala Chai are well known in Ayurveda for many health benefits.

  • Ginger is anti-inflammatory and improves digestion, prevents and manages stomach ulcers, protects against symptoms of cold and flu, and stimulates blood circulation. It also reduces blood cholesterol by improving liver function
  • Cinnamon has Anti-fungal, Anti-bacterial properties. It helps in lowering LDL cholesterol and has a regulatory effect on blood sugar, making it especially beneficial for people with Type 2 diabetes
  • Cardamom is considered as a kidney cleanser. It is known to enhance appetite, improve digestion and provide relief from acidity in the stomach. It is also considered beneficial to the urinary tract system
  • Cloves are well-known for its anti-bacterial, anti-viral, anti-fungal and antiseptic properties. They’re also known to heal ailments of the digestive system and promote good digestion as well as metabolism
  • Black Pepper is a powerful anti-oxidant. It improves digestion and promotes intestinal health. It is an effective remedy for respiratory conditions including colds, coughs, and flu
  • Star Anise aids digestion, alleviates cramps and reduces nausea. It also helps in preventing constipation, supports good sleep, promotes bone and skin health.

Healthy Eating: Golden Vegetable Bites

Golden Vegetable BitesToday, let’s look at an extremely flexible recipe where you can use the veggies of your choice or based on what is available with you. These Golden Vegetable Bites will take a little time, but they’re definitely worth the wait. Here’s your go-to Golden Vegetable Bites that are fit for a snack as well as a meal. 

What You Will Need 

  • Water: 2 cups
  • Cumin seeds: 1 tsp
  • Grated carrot: ½ cup
  • Peas: ½ cup
  • Grated ginger: 1 tsp
  • Green chillies (finely chopped): 3-4
  • Curry leaves: 4-5
  • Roasted semolina: ½ cup
  • Chopped onion: ½ cup
  • Boiled + grated potato: ½ cup
  • Shredded paneer: ½ cup
  • Chopped coriander: ½ cup
  • Salt as per taste
  • Red chilli powder: ½ tsp
  • Turmeric: ½ tsp
  • Garam masala: 1 tsp
  • Chat masala: ½ tsp
  • Lime juice: 1 tsp
  • Rice flour: 3 tbsp

How To Prepare

  1. Heat a pan and add 2 cups of water. Add in jeera and boil for a few minutes.
  2. After the water starts boiling, add the carrot, peas, ginger, green chillies and curry leaves. Let it cook for 2-3 min.
  3. Pour ½ cup of roasted semolina, stir well and let it soak the water. Stir continuously.
  4. Cook the semolina for a while and then add salt with ½ cup of onions. Make a medium-thick consistency.
  5. Off the flame and mix in potatoes, paneer, coriander, salt, lemon along with masalas.
  6. In the same mixer, add rice flour for binding and mix well.
  7. Now take a tray and grease it well with oil or apply greased butter paper on the tray. Spread the mixer over the tray and let it be of medium width, not too thin and not too thick. Keep this in the fridge for 1 hour.
  8. After an hour take it out and cut it into squares using a sharp knife.
  9. Now heat a pan and brush some oil, put the veggie squares on it to roast.
  10. Once golden brown, flip the side and cook it well. Once it is brown on both sides, take them out.
  11. Enjoy it with green chutney.

Healthy Eating: Idli Sandwich

idili sandwichThe monsoons have begun and eating nutritious home cooked meals might be the best option for your health. As we understand that your regular food might get boring, adding a little twist would make things more interesting for you. So let’s begin by preparing this delicious and healthy Idli Sandwich. 

What You Will Need 

  • Idli Batter – 500 g
  • Boiled & crushed corn – 2 tbsp
  • Finely chopped capsicum – 2 tbsp  
  • Finely chopped onion – 2 tbsp
  • Grated carrot – 2 tbsp
  • Paneer – 50 gm
  • Finely chopped coriander – 1 tbsp
  • Green chilli paste – 1 tbsp
  • Salt as per taste
  • Oil – 2 tbsp
  • Chat masala – 1 tsp
  • Red chilli powder – 1 tsp
  • Black pepper powder – 1 tsp
  • Sesame seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Green chutney – ½ cup

How To Prepare     

  1. Add water in a steamer and put it to boil. Grease a plate with oil and pour 2 big spoons of batter on the plate and spread evenly. Sprinkle some red chilli powder and black pepper powder over it. Put the plate in the hot steamer and allow it to cook.
  2. Once done, remove the plate and allow it to cool. Cut the cooked idli batter in a round shape using a mold. Make all the idlis in similar fashion.
  3. Take a mixing bowl and add corn, capsicum, onion, carrot, paneer, coriander, green chilli paste, chat masala, salt and mix everything well.
  4. Now, let us start making the sandwich. Take two idlis, spread green chutney on one side of both the idlis and in-between place the prepared stuffing.
  5. On a pan, pour in some oil. After the oil heats up, add in the mustard seeds & sesame seeds. After they start crackling up, place the prepared sandwich on it. 
  6. After it is golden brown on one side, flip it over and cook the other side.
  7. Our hot idli sandwich is ready! Enjoy it with chutney.

Note: You can also use your left over idlis to make these. Just cut the idli from the middle, stuff and grill.

Special Valentine’s Day Recipe: Dates and Nuts Custard

Looking for something tasty and sweet that you and your significant other can share on Valentine’s Day, without ruining your resolution to be healthy? Try this tasty, healthy and absolutely delicious dates and nuts custard that you can eat guilt-free! It is easy to make and completely sugar-free. This recipe can be made with basic ingredients in your kitchen. Let’s get started! 

What You Will Need 

  • Seedless dates – 1 cup 
  • Hot boiled milk – 1 cup 
  • Cold milk – 2 cups 
  • Banana – 1 
  • Vanilla essence – 1 tbsp
  • Mix dry fruits (cashew, almonds, walnuts, pistachios) – 1 cup 
  • Raisins – ½ cup 
  • Sliced strawberries – ½ cup
  • Corn flour – ½ cup 
  • Desiccated coconut – ½ cup 
  • Cinnamon powder – 2 tbsp 

How To Prepare 

  1. Soak 1 cup of dates in boiled milk for 30 minutes.
  2. In a blender, add cold milk, 1 banana, soaked dates along with milk and vanilla essence. Blend till smooth.
  3. Strain the contents in a big bowl to get rid of unwanted lumps.
  4. Now, add in the corn flour and mix it very well to a fine batter.
  5. Heat a pan and pour the contents, stir continuously until it is thick and reduces the moisture but is still a little runny.
  6. Place the serving bowls and let us start plating.
  7. First layer the bowl with dates and milk custard, sprinkle some cinnamon powder, add the desiccated coconut, place the mix nuts generously. Add a few raisins and top it up with 3-4 slices of strawberry.
  8. Allow this to set in the fridge or even outside if the temperature is cool, for 20-30 minutes. Your Date and Nuts Custard is ready!
