Healthy Eating: Idli Sandwich

idili sandwichThe monsoons have begun and eating nutritious home cooked meals might be the best option for your health. As we understand that your regular food might get boring, adding a little twist would make things more interesting for you. So let’s begin by preparing this delicious and healthy Idli Sandwich. 

What You Will Need 

  • Idli Batter – 500 g
  • Boiled & crushed corn – 2 tbsp
  • Finely chopped capsicum – 2 tbsp  
  • Finely chopped onion – 2 tbsp
  • Grated carrot – 2 tbsp
  • Paneer – 50 gm
  • Finely chopped coriander – 1 tbsp
  • Green chilli paste – 1 tbsp
  • Salt as per taste
  • Oil – 2 tbsp
  • Chat masala – 1 tsp
  • Red chilli powder – 1 tsp
  • Black pepper powder – 1 tsp
  • Sesame seeds – 1 tsp
  • Mustard seeds – 1 tsp
  • Green chutney – ½ cup

How To Prepare     

  1. Add water in a steamer and put it to boil. Grease a plate with oil and pour 2 big spoons of batter on the plate and spread evenly. Sprinkle some red chilli powder and black pepper powder over it. Put the plate in the hot steamer and allow it to cook.
  2. Once done, remove the plate and allow it to cool. Cut the cooked idli batter in a round shape using a mold. Make all the idlis in similar fashion.
  3. Take a mixing bowl and add corn, capsicum, onion, carrot, paneer, coriander, green chilli paste, chat masala, salt and mix everything well.
  4. Now, let us start making the sandwich. Take two idlis, spread green chutney on one side of both the idlis and in-between place the prepared stuffing.
  5. On a pan, pour in some oil. After the oil heats up, add in the mustard seeds & sesame seeds. After they start crackling up, place the prepared sandwich on it. 
  6. After it is golden brown on one side, flip it over and cook the other side.
  7. Our hot idli sandwich is ready! Enjoy it with chutney.

Note: You can also use your left over idlis to make these. Just cut the idli from the middle, stuff and grill.

Healthy Eating: Homemade Protein Bars

Want to stock up on your winter protein supply? We’ve got you covered with these simple, healthy, no bake, sugar-free homemade protein bars. You can make these protein bars using ingredients available in your kitchen. It is quick and quite suited for winters! 

What You Will Need 

  • Dates – 1 cup 
  • Hot water – 1 cup 
  • Almonds – ½ cup 
  • Cashews – ½ cup 
  • Walnuts – ½ cup 
  • Pistachio – ½ cup 
  • Rolled oats – ¼ cup 
  • Desiccated coconut – ½ cup 
  • Flax seeds – 1 tbsp 
  • Pumpkin seeds – 1 tbsp 
  • Sesame seeds – 1 tbsp 
  • Cardamom powder – 1 tsp 
  • Cinnamon powder – 1 tsp 
  • Jaggery powder – 2 tbsp 

How To Prepare 

  1. In a bowl, add the dates and hot water and soak the dates for 1-2 hours until it softens. Once soft, remove the seeds and blend it in a mixture to a fine, smooth paste. 
  2. Heat a pan and add almonds, cashews, pistachio, walnuts, oats, flax seeds, pumpkin seeds and sesame seeds. Dry roast this for 5-7 minutes until they turn crisp and slight golden. 
  3. Time to add the desiccated coconut in the pan and sauté just for 1-2 minutes and remove all the contents in a bowl.
  4. In the same pan, add the dates paste and allow it to cook for 5 minutes until the paste thickens and loses some moisture.
  5. Now add the roasted nuts and seeds mixture to the dates paste and season it with cardamom powder, cinnamon powder & also add the jaggery powder. Mix it well until everything comes together.
  6. Grease a mithai tray or plate with some ghee/ oil and spread the mixture uniformly. Refrigerate for 1-2 hours until it sets completely and using a knife, cut it into bars and enjoy!

Healthy Eating: Masala Egg Sandwich

masala egg sandwichIf you woke up this morning thinking about eating eggs, then you’ve come to the right place. Like with all my other recipes, I’m going to be putting a twist on traditional eggs by making a full meal out of them using veggies and healthy carbs. While sandwiches are considered to be a “shortcut breakfast”, this Masala Egg Sandwich is best eaten as a meal! 

What You Will Need

  • Boiled eggs – 2 whole
  • Wheat bread/ multigrain bread – 4 slices
  • Onion – 1 big finely chopped
  • Tomato – 1 big finely chopped
  • Coriander finely chopped – ¼ cup
  • Garlic ginger paste – 1 tbsp
  • Cheese – 1 cube
  • Few onion slices
  • Few capsicum slices
  • Green chutney – 2 tbsp
  • Red chilli powder – 1 tsp
  • Turmeric – ½ tsp
  • Garam masala – ½ tsp
  • Jeera powder – ½ tsp
  • Oil – 1 tbsp

How To Prepare

  1. Heat a pan, add oil and allow the ginger garlic paste to saute.
  2. Once done, add in the onion and cook for a while until translucent.
  3. Throw in the tomatoes, coriander and cook for 5 more minutes.
  4. Add the spices, chilli powder, turmeric, salt and garam masala. Give it a quick mix.
  5. Mix some water and allow this to cook for a few minutes.
  6. Chop the boiled eggs into small pieces and add them to the pan. Allow it to cook for 3-5 minutes.
  7. Turn the flame off and your egg masala is ready! 
  8. Take 2 bread slices, layer both with green chutney. Add the egg masala, top it up with sliced onions, capsicum and shredded cheese (1/2 cube). Sprinkle some chat masala and cover with another slice of bread. Repeat the process to make another sandwich.
  9. Heat a flat pan, brush some oil and place the sandwich on it for a grill. After it is golden brown on one side, flip it over and cook the other side.
  10. Cut the sandwich into 4 pieces and serve hot with chutney or ketchup.

Note: you can use chopped paneer or tofu cubes instead of eggs.

Healthy Eating: Eggless Whole Wheat Jaggery Marble Cake

Whole Wheat Jaggery Marble Cake

This Cake reminded me of my childhood Britannia cakes. We, as kids, could not stop at one slice. The minute that packet was opened, the whole cake vanished with no crumbs left behind. Marble Cake has both vanilla and chocolate flavors and two distinct colors are mixed together to create a marble effect. To top it all, this gorgeous marble cake is a stress buster for me and made my life super special over the weekend. It is a perfect cake to accompany a cup of Tea or Coffee. Bake a loaf and gift it to your loved ones. I am sure they will love it.

What You Will Need

(1 cup= 200 gm,  1 tbsp=15 gm , 1tsp= 5 gm)

  • Whole wheat flour – 2 cups 
  • Odorless oil/Pure ghee – ½ cup 
  • Jaggery powder/syrup (melt jaggery in ⅛ cup water) – 1 cup 
  • Cocoa powder (unsweetened) – 1 tbsp 
  • Vanilla essence – 1 tsp 
  • Baking powder (7.5gm) – 1 ½ tsp
  • Baking soda (5gm) – 1 tsp 
  • Warm water – 1 cup (can be replaced with milk)  

How To Prepare

  1. Preheat  the oven at 350*F/180*C for 10 mins. Take a normal size Cake Loaf Pan (7-8 inches) and grease it lightly. You may also line it with a parchment paper for easy handling.
  2. Take a big bowl and sift 2 cups of flour, baking powder and baking soda into it. Mix it well with a fork and set it aside.
  3. In another bowl, add ghee/oil, curd and mix well. Add jaggery powder/syrup and beat the mixture till jaggery dissolves. 
  4. Add all the dry ingredients and mix gently with a cut and fold method. Add ¼ cup warm water/milk and fold it again. If you feel the batter is thick then slowly add warm water/milk  till the batter is in flowing consistency (DO NOT OVERBEAT THE BATTER).
  5. Now divide this batter into 2 equal parts.
  6. In one part of the batter, add vanilla essence. Mix it well till incorporated in the batter. This is your vanilla Batter.
  7. In the other half of the batter, add the cocoa powder. Mix well with a fork till well incorporated and therefore, the whole of this batter turns chocolate brown in color.
  8. To pour the batter, add 1 tbsp vanilla batter first at the bottom of the greased pan.Then pour the 1 tbsp chocolate batter on top.Tap the pan on the counter a few times so that the batter settles down evenly with no gaps in between.You may pour the vanilla and chocolate batters in the pan in an alternate sequence or the sequence of your desire, could also be chocolate first and vanilla later. However you want to do it.
  9. Keep it  in the oven for 30-40 mins. at 180*C. After 30 mins, check the cake with a toothpick. If it comes out clean then remove the cake tin from the oven and keep it on a cool down wire rack . Demould the tin when it completely cools down. (If it sticks on a toothpick, then bake it for more than 10 min. at 160*C .Temperature may vary in different ovens/OTGs.
  10. Cut it into small pieces according to your choice and store it in a steel or glass container in the refrigerator for a week. Enjoy a hearty slice of your Marble Cake with a cup of coffee or tea.

Why Is This Marble Cake Healthier Than A Bakery/Store Cake?

  • We are adding whole wheat flour in a cake which has more fibre, packed with B vitamins, while a bakery cake is made with maida (refined flour). Eating maida raises your bad cholesterol (LDL), makes you put on weight, clogs arteries, raises BP, disrupts blood glucose, keeps you hungry, causes you to crave for sweets, causes mood swings and ruins your health. People eat it because they’re probably unaware of its consequences.
  • We are using jaggery as a sweetener in cake, which is a good source of iron, helps in maintaining the electrolyte balance, aids digestion and helps prevent water retention thanks to its potassium content. Bakery cakes are loaded with white sugar and contain only empty calories without any nutrients. Excess sugar creates higher blood pressure, inflammation, weight gain, diabetes and fatty liver disease.
  • In Bakery cakes, they use shortening and margarine, which are Trans Fats (Hydrogenated fats) that raise your risk of heart disease. They also raise your “bad” cholesterol levels, lower your “good” cholesterol and cause inflammation, therefore, hardening of your arteries.
