Be a happy and healthy eater

Some people think after doing strenuous workouts and crash dieting it’s time to relax over the weekend and relaxing means literally binging on outside food. More often than not, the thought process is –‘its only today so let me indulge…..I will make up for this binging over the week by sipping a meal or two’.

When Monday arrives, they are guilty of having indulged over the weekend. One needs to stop and notice these chain of events. There has to be a change in the behavior. Individuals’ need to realize that indulging in binge eating for two days and then feeling guilty and trying to rectify the situation does not work.

Hence it is said that ‘Mindful Eating’ is a must and the best solution. Mindful eating teaches us to simply observe thoughts, feelings and cravings for food. It enable us to change our behavior while we maintain our sanity and happiness

Here are Some Mindful eating tips-–

  • Multi-tasking while eating or watching television while eating always causes distraction or causes hurried eating. So switch off your phone, TV and Computer before eating.
  • Preferably adopt the cross legged posture Or sit At your usual dining place.
  • Try to eat sitting cross legged. You can do this even while sitting on a chair. Sitting cross legged on the floor and eating meals is an age old technique from our grandma’s days. (This helps to blood flow to the stomach area)
  • Calm your mind and body then start eating your meal. When your mind is calm and composed, you release the right amount of digestive juices which gives you better digestion.
  • If you are stressed or guilty while eating -stress hormone called cortisol is released which lowers our metabolic rate, prevent fat burning and help convert food to fat.
  • Take deep breath, calm yourself and get settled before eating.

While Eating-

  • Don’t be in a rush while eating and try to get up fast.
  • Start eating (preferably with your hands) and eat slowly.
  • Chew your food slowly
  • Use your entire mouth and do not just chew from 1 side of your Jaw.
  • While you still have food in your mouth don’t pick up another morsel from your plate.
  • Keeping food ready in your hands or in a spoon means you are eating fast and will ultimately this could lead to overeating.
  • Eat with your senses and think about how the food is nourishing you from within.
  • Savor every bit of what you eat, slowly and mindfully and you will naturally find your threshold. So be silence and attentive while you eat.
  • Prepare Food in smaller quantity. If number of People are less it helps to prepare lesser quantity and better by retaining nutrient value.
  • Always eat food that is freshly prepared. One should consume food within 3 hours of Cooking.
  • Don’t deep freeze cooked food.
  • Try eating with your non-dominant hand. If you’re a righty, hold your fork in your left hand when lifting food to your mouth whenever you eat outside in restaurant or party
  • Whenever you get the craving for a sweet – before opening the fridge or cabinet for the same, take a deep breath and ask yourself, “Am I really hungry?” Do something else, like reading or going on a short walk as that will help you to avoid any emotional extra eating under stress.

Let’s start to enjoy eating food rather than think of it as a task to complete. Remind the body of its own intelligence and its ability to self-regulate for you! Cultivate a sustainable, balanced and healthy approach to the way we eat, the way we look, and the way we live.

5 tips to eat safe outside your home

Eating outside your home comes as a big relief for most of us especially when we want to have something different from the regular routine “Ghar ka Khana”.

No matter how much we love home cooked food, there comes a point in time when we all crave for outside food even if it is not prepared in the best hygienic way. And well, it’s the first thing foodies like me look forward to do when on holidays or socializing.

Usually,nutritionists and dieticians always emphasize on healthy choices and mindful eating practices while eating out. But sadly, eating healthy i.e non-fatty, low calorie foods alone don’t help to stay healthy and fit. While we pay attention to the fat or sugar content and the processing method of the food while eating out, it’s also equally important to make sure what is served on our plate is safe enough to be consumed.

Failure to adhere to proper safety measures can cause nausea, vomiting, cramps, stomach upset, and in worst case can lead to a serious episode of food poisoning or food borne illness. Thus,a mere act of enjoyment and pleasing the taste buds ends up putting extra stress on our digestive and immune system.

So what’s the alternative? Is there something which can take care of both-the taste buds and our body’s system? The Answer is YES

Here are 5 simple tips which can help us lower the health risk and ensure that the food safety part is not completely ignored!

1) Look for eateries having open kitchen or at least which allows a view of the kitchen

Food safety is all about what goes beyond the scenes i,e inside the kitchen and depends on the person who is cooking as well as the one who is serving the food. Hence, opting for places or restaurant joints that have open kitchen or dining place which allows you to have a view of the kitchen area helps a lot. This will give you some idea of the cleanliness of the kitchen premise, the utensils/equipment and also whether the chef and other kitchen staff are taking care of personal hygiene or not.

2) Go for places/joints which are always crowded or have high visitor ratio

Apart from ensuring that such restaurant is popular and serves tasty food, it will also ensure safer food. This is because crowded places have high turnover of food, and hence chances of getting served stale food reduces (example-the left over gravies and sauces or foods such as cooked rice from previous day).

3) Avoid opting for dishes which are too exotic, off beat or off seasonal

This is largely to play safe as we never know which ingredients go inthe preparation of such foods. Also,it’salways best to avoid dishes which have offseasonal food ingredients say any fruit or vegetable, because storage method of such foods then is a big question?Which if not stored properly as per the protocol can impose a potential risk for food toxicity.

4) Prefer cooked foods over raw or cold foods

This is applicable while eatingin the roadside eateries or joints as they often use food items like chopped onion, peeled potatoes, chutneys etc; which are pre prepared and if not covered and stored properlycan be subjected to contamination from flies, pests etc and thus become a potential health hazard. Opting for cooked foods ensures that at least some microbes get destroyed due to heat.

For example:

#Go for grilled/toasted sandwich instead of regular sandwich

5)Beware of what you eat during buffet set ups

** Avoid having cut salads, cold pastas and fruits in buffet set ups like weddings or in hotels since they are likely to sit there for a long time before they actually go into our plate.We can have soups, grilled/sauteedveggies or steamed starters instead of salads in such situations to fill ourselves and save us from overindulgence.

** Besides this, make sure that all other foods kept at buffet table are maintained at proper temperatures; cold food should be kept cold, hot food should be kept hot when you serve them on your plate.

Remember, next time when you head out just follow these simple tips to make sure you enjoy your time away from the kitchen without thinking of the extra calories or worrying about food poisoning…think good nutrition!!

Fish In Pesto Sauce

FISH IN PESTO SAUCE- RAJ BHALLA

The star of the dish is the Pesto Sauce which made my hardcore Punjabi food loving mom say WOW! So, you can imagine how good it was! This sauce is full of strong flavor of different herbs and nuts, truly amazing and it is sharp.

Cooking time-15 mins

Serves- 2

Recipe ingredients

  • Fish Fillets, I used Singhara (Cat Fish).
  • Mixed dried herbs
  • Salt and Pepper.
  • 1-2 tablespoons oil to pan fry the fillets (olive)
  • Basil leaves.
  • Mint Leaves
  • 4-5 Garlic cloves
  • Walnuts (you may use Cashew nut)
  • Little Olive oil extra

Recipe preparation

  1. First, we will make the Pesto sauce and It is very simple.
  2. Mix Basil, mint leaves, garlic cloves, little olive oil, walnuts, little salt and pepper in a grinder.
  3. Grind it well but not to a coarse paste. You should grind it only to the level where you can feel the grains of walnut. It should have a nutty bite.
  4. Your Pesto Sauce is ready. Keep it aside.
  5. Now, season the fillets with salt, pepper and Mixed herbs.
  6. Heat oil in the pan. Though make sure oil is not too hot. We will cook it on medium heat else on high heat else fish will burn from outside and won’t cook from inside.
  7. Sear the fillets and cook for 5 -7 minutes from both sides. Do check how well your fish is done. It should be white and fibery from inside once cooked. If it’s pale or off white, its not cooked.
  8. Once done, using a spoon, smear the pesto Sauce on one side while the fish is in the pan. Let it cook for another 2 minutes for the fish to absorb some flavors of the sauce.
  9. Serve hot.

Rava Idli (Steamed Savory Semolina Cakes)

 

RAVA IDLI

A quick and healthy Indian breakfast, which energizes you for the rest of the day

Cooking time-45 mins

Serves- 4

Recipe ingredients

  • Oil or ghee – 2 tsp
  • Cashew nuts – 4-5, broken
  • Mustard seeds – 1/4 tsp
  • Urad dal – 1 tsp
  • Rava/sooji/semolina – 1 1/2 cups
  • Ginger – 1 tbsp, grated or finely chopped
  • Green chili – 1, finely chopped
  • Curry leaves – 6-8, cut into thin ribbons
  • Cilantro leaves – 2 tbsp, chopped
  • Carrot – 1 medium-sized, shredded
  • Yogurt – 3/4 cup
  • Salt – 1 tsp
  • Baking soda – 1/4 tsp

Recipe preparation

  1. Heat oil (or ghee) in a large skillet. Fry the cashews, drain and keep aside.
  2. Then add the mustard seeds and urad dal. Fry till the seeds crackle and the urad dal turns light golden.
  3. Then add the rava/semolina and roast for a couple of minutes on medium heat, stirring all the while.
  4. Remove this to a mixing bowl and cool slightly. Then add the fried cashews, ginger, green chili, curry leaves, cilantro and carrots. Sir to combine, add yogurt, mix well till it the mixture is uniformly moistened.
  5. Add a little water to make a smooth, but thick batter. The batter should be thicker than a regular pancake or dosa batter. Cover the bowl and rest for half an hour.
  6. After half an hour, add salt and baking soda to the batter and mix well. Adjust with a bit of water if batter seems to have thickened further.
  7. Meanwhile, heat water in a steamer vessel. Grease and set aside the idli plates.
  8. Pour batter in the idli plates and steam in the steamer vessel for 8-10 minutes or till idlis are cooked (check with a toothpick to see if it comes clean).
  9. Remove from steamer, rest for 5 minutes and remove the idlis from the idli plates using a spoon.
  10. Serve idlis immediately with hot sambar and spicy chutney powder. Store leftovers in a hot-pot or casserole. These can be re-heated in the microwave or lightly steamed again.
