Healthy Eating: Oats & Besan Pancake

Healthy Eating

Eating the same or similar food everyday can be a boring affair. So if you’re tired of eating roti-sabji (flattened wheat bread and vegetables) and are looking for a change, try adding a twist to your meals! Here’s a Oats & Besan Pancake recipe which is super easy, nutritious and tasty.

Ingredients

  • Besan / gram flour – 1 cup*
  • Roasted and powdered oats flakes – ½ cup
  • Finely chopped onion – ½ cup
  • Grated carrot – ½ cup
  • Finely chopped tomato – ½ cup
  • Finely chopped capsicum – ½ cup
  • Washed and chopped coriander – 4 tbsp*
  • Chilly ginger paste – 1 tbsp
  • Turmeric – ¼ tsp*
  • Chilly powder – ½ tsp
  • Salt to taste

Method

  • Mix besan and oats. Add the required amount of water to it to make a medium thick batter
  • Add salt as required and allow it to rest till you chop the vegetables
  • Add the chopped vegetables to the batter and stir
  • Add green chilly ginger paste, turmeric, chilly powder and coriander to the batter and stir
  • Add some water if required to make the batter thin
  • Heat a pan and spread the batter once hot
  • Make a thin medium sized chilla and allow it to cook on medium flame
  • Flip it over once cooked from bottom.
  • It turns out soft and thin even without a drop of oil but if you like you can add a tsp per pancake.
  • Serve it hot with green chutney

Highlights

It works great as a quick breakfast idea. Best for your kid’s tiffin but I love to eat it for dinner as well. Oats has Beta Glucan which is a soluble fiber and helps in losing weight. It aids blood sugar control as well and is best for the gut!

Healthy Eating: Vegetable Stuffed Ragi Paratha

vegetable stuffed ragi parathaAre you getting the most out of your breakfast? Do you find it difficult to make it more nutritious? Today, let’s take a healthy twist on the normal wheat paratha! Let’s try a Vegetable Stuffed Ragi Paratha which will give your body a punch of calcium along with required minerals!

It is slightly different in color, but definitely worth the try!

What You Will Need:

  • Ragi Flour – 1 cup
  • Water – 1 cup
  • Cooked Peas – ½ cup
  • Shredded Carrot – ½ cup
  • Jeera – ¼ tsp
  • Mustard Seeds – ¼ tsp
  • Ginger Finely Chopped – 1 tsp
  • Curry Leaves Chopped – 1 tsp
  • Lemon Juice – 1 tsp
  • Coriander Leaves Chopped – 2 tbsp
  • Green Chillies – 1-2
  • Plastic paper
  • Oil
  • Salt to taste

How To Prepare

Vegetable stuffing preparation:

  1. In a mixture blender, add boiled peas, jeera, green chilies and make a coarse paste.
  2. Heat 1 tsp of oil in a pan. Add mustard seeds and allow it to crackle, then add ginger & curry leaves and fry it for few seconds.
  3. Once done, add the green peas mixture, carrot and salt. If the mixture seems dry, add a little water and sauté for a while.
  4. Now switch off the flame and add lemon juice along with coriander.

Paratha preparation:

  1. Put a pan on flame and add 1 cup of water in it along with salt. Once hot, add the Ragi flour and switch off the flame.
  2. Mix thoroughly with a spatula and allow the flour to rest for 5-7 mins.
  3. Knead the mixture well to make a soft dough after resting it.
  4. Make equal quantity of balls from the dough and flatten them.
  5. Dust a flattened ball in flour and roll it into a thin paratha on a plastic paper. Repeat the process for all balls.
  6. Now take one Ragi paratha, place the vegetable stuffing over it and spread evenly.
  7. Slightly wet the edges of the paratha and place another paratha over it and seal the edges by wetting your fingers.
  8. Dust with flour and slightly roll the paratha.
  9. Now heat a pan, brush some oil and allow the paratha to cook.
  10. Once golden brown, flip and allow it to cook on the other side.
  11. Your healthy, hot Vegetable Stuffed Ragi Paratha is ready! Serve it along with some raita.

Healthy Eating: The Ultimate Healthy Chivda

It is common for tea/coffee lovers to indulge in some snacks along with their favorite beverage but most of those snacks are often not healthy. So, here is an amazing alternative which is namkeen and crisp! Your very own Healthy Chivda! This bowl can be a part of your regular evening snacks as it provides satiety and nutrition all in one! 

What You Will Need 

  • Rolled oats – 1 cup
  • Poha – ½ cup 
  • Puffed rice – 1 cup 
  • Makhana – 1 cup 
  • Peanuts – ½ cup 
  • Thin cut coconut – ¼ cup 
  • Ghee – 1 tbsp 
  • Mustard seeds – 1 tsp 
  • Cumin seeds – 1 tsp 
  • Curry leaves – 8-10 
  • Crush garlic cloves – 4-5 
  • Dried red chilli – 1
  • Split green chilli – 2 
  • Turmeric – 1 tbsp 
  • Chilli powder – 1 tsp 
  • Salt 

How To Prepare 

  1. Dry roast the rolled oats for 5-7 mins until it is crisp & a little golden. In the same pan, roast the poha until crisp.
  2. In another pan, heat the ghee, add mustard seeds, cumin seeds and broken red chilli. Allow it to crackle, then fry the peanuts.
  3. Once the peanuts turn golden, add the crushed garlic, split green chilli, curry leaves and coconut. Fry this until the curry leaves turn crisp & the garlic is roasted.
  4. Time to add the spices, add salt, turmeric & red chilli powder. Give this a quick mix.
  5. Now add the roasted oats, roasted poha along with puffed rice and makhana. Mix this well and allow to roast for a few minutes.
  6. Store it in an airtight container once it cools down.

Note: You can also make chivda bhel by adding chopped onion, tomato, coriander, along with some salt & lemon to the chivda. Enjoy it immediately before it turns soggy. If you’re allergic to peanuts, avoid them.

Fruity Nutty Yogurt

December is a month for celebrations and no celebration is complete without after-meal treats. If you’re keen on sticking to your healthy eating resolution and are avoiding sweets, we’re here to provide you with some relief to your sweet tooth! Here’s a healthy dessert recipe which will take minimum time with minimum ingredients. Let’s try the Fruity Nutty Yogurt!

What You Will Need:

  • Hung curd – 1 cup (200 gm)
  • Strawberries – 4 (cut into halves)
  • Honey – 1 tsp
  • Pistachio – 2 (coarsely chopped)
  • Almond – 2 (coarsely chopped) 

How to Prepare:

  1. Heat a small pan and dry roast the almonds and pistachio for 2-3 min on medium flame. Once done keep it aside.
  2. In a mixer blender, add strawberries and 2 tbsp of hung curd and blend it into a puree. Remove it in a mixing bowl.
  3. In the bowl, add the remaining curd and whisk it lightly till it has that lovely pink colour
  4. Time to add the honey, only if you wish to make it a little sweeter.
  5. Serve it in a small bowl and spread the roasted nuts over it.
  6. Your quick healthy dessert is ready!
